LAVENDER VINAIGRETTE

I found a bottle of Lavender vinegar in my pantry that someone must have given me at some point. I did a search to see what I could make with it, and found this recipe. I'm posting it here for safe keeping and ZWT II. I think plain honey could be used instead of the lavender honey.

Steps:

  • Whisk all ingredients together.
  • Serve on baby spinach and/or mixed greens.

2 teaspoons lavender honey
1 tablespoon Dijon mustard
1 tablespoon lavender vinegar

LAVENDER SALAD DRESSING

Pour this on a fresh picked bed of baby greens like arugula. Top with some rich creamy cheese like a warmed blue. Then top it with some toasted pine nuts! Yummy!!

Steps:

  • In a blender, puree the vinegar, shallots and lemon.
  • While still running, add the sugar, lavender, salt, mustard, and pepper. Slowly pour in olive oil.
  • Transfer dressing to a jar and stir in the thyme leaves.

2/3 cup olive oil
1/3 cup white balsamic vinegar
1 tablespoon finely minced shallot
1 -2 teaspoon sugar
2 teaspoons freshly grated lemon zest
1 teaspoon dried lavender (food grade) or 2 teaspoons fresh lavender (food grade)
1/2 teaspoon salt
1/4 teaspoon mustard powder
1/4 teaspoon ground pepper
1 teaspoon dried thyme leaves

EASY HOMEMADE LAVENDER SCENTED AND INFUSED VINEGAR

A wonderful addition to any cook's pantry, this lavender infused vinegar is easy to make and adds a certain j' nés quoi to any savoury dish. Use it in my Lavender Mayonnaise or to flavour a salad dressing - all the lavender taste but not the chewy lavender buds! This vinegar retains not only the flavour of the lavender, but also the fragrance too. If you have the lavender bushes, it is worth making a few bottles of this, it will enliven any drear winter's day and makes a great gift for a foodie friend. This is a Francis Bissell recipe, from a great little cookbook that my daughter bought for me this Mother's Day!

Easy Homemade Lavender Scented and Infused Vinegar image

Steps:

  • Place five sprigs of lavender in each bottle. Close the bottles again and leave them in a sunny place for four weeks. If you still have fresh lavender halfway through the maturation process, replace the lavender in the bottles with fresh sprigs.
  • For long term storage, store in a cool, dry and dark place. Last for up to 2 or 3 years.
  • Use in salad dressings, mayonnaise, marinades, dips and spreads.

Steps:

  • In a medium saucepan, cook the honey over moderate heat until bubbling. Add the vinegar and lavender leaves and simmer over moderately low heat until reduced to 3/4 cup, 8 to 10 minutes.
  • Strain and let cool slightly. Whisk in the oil and season with salt and pepper. Add the lavender flowers just before serving.
