LAYERED FRESH FRUIT SALAD
People always pass on compliments when I take this salad to covered-dish suppers. It's nice on a hot day...with a winter meal...or as a dessert! We live on a small farm where my garden gives me lots of possibilities for fresh food. -Page Alexander, Baldwin City, Kansas

- Place first 6 ingredients in a saucepan; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. Cool completely. Remove cinnamon stick., Layer fruit in a large glass bowl. Pour juice mixture over top. Refrigerate, covered, several hours.

Here's a refreshing fruit salad that is great in the Spring and Summer when fresh blueberries and strawberries are plentiful. It is great as a salad side dish, as a dessert, or as a topping on pound cake or ice cream!

- Cut cantaloupe and pineapple into large bite-size pieces; place the pieces, along with the grapes, and any other fruits desired, and place in a large bowl.
- Combine the orange marmalade, lemon juice, and orange juice in a tightly covered small container; shake to mix well.
- Pour marmalade mixture over the fruit.
- Let set overnight to blend flavors.
- Just before serving, mix in EITHER blueberries OR strawberries and any other fruit desired.
- Preparation time varies depending on the amount of different types of fruit put inches.

- Mix the cream cheese, milk, lemon peel and lemon juice until well blended and smooth.
- Beat the whipping cream and confectioners' sugar in a small chilled bowl until stiff. Fold cream cheese mixture gently into whipped cream.
- Cut the apples into thin slices. Mix 1/2 of the cream cheese mixture and the apple slices, stirring to coat.
- Cut the honeydew into cubes and place in a 3-quart bowl. Spread apple mixture on top of melon. Place grapes on apple mixture.
- Spread remaining cream cheese mixture over grapes. Sprinkle pecans on top. Refrigerate until ready to serve.

- In a bowl, toss the bananas slices in lemon juice to keep from browning.
- In an extra large fancy glass bowl, in a layering effect, place the pineapple, blueberries, HALF of the strawberries, oranges, kiwi fruit, watermelon, and the remaining strawberries or raspberries.
- In a mixer bowl, beat the softened cream cheese until smooth.
- Add in confectioners sugar, and continue beating.
