SHRIMP COCKTAIL WITH HOMEMADE SALSA

Shrimp Cocktail with Homemade Salsa image

Steps:

  • POUR lime juice over shrimp in a bowl. Let stand about 3 minutes. Drain.
  • Salsa Rosada: In a separate bowl put mayonnaise, ketchup and Worcestershire saucet. Stir everything well.
  • MIX salsa rosada with shrimp, cucumber and onion in a large bowl. Refrigerate for 30 minutes.
  • In 12 small bowls place a layer of lettuce at the bottom, then avocado and one of the shrimp mixture. Garnish with cilantro.

1/2 cup of KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
1/4 cup HEINZ Tomato Ketchup
1/2 tsp. of LEA & PERRINS Worcestershire Sauce
3 medium cucumbers, seeded and diced
1 Tbsp. finely chopped red onion
2 cups romaine lettuce, finely cut
4 avocados, cut into small squares
2 Tbsp. chopped fresh cilantro for garnish

Steps:

  • Shell,devien and rinse shrimp, leaving tails intact.
  • In a medium saucepan, combine shrimp and Lea & Perrins White Wine Worcestershire Sauce; bring to a boil.
  • Reduce heat and simmer until shrimp turn pink, 3-4 minutes.
  • Stir in remaining ingredients and chill.
  • Drain and serve as a chilled appetizer or salad topper, sprinkled with fresh herbs.

  • Combine lemon zest, vinegar, sugar, 3 Tbsp. Diamond Crystal or 1 Tbsp. plus 1½ tsp. Morton kosher salt, and 6 cups water in a large pot; squeeze in juice from a lemon half. Bring to a rolling boil. Remove pot from heat and add shrimp. Let sit until opaque throughout (slice a shrimp in half to check), about 3 minutes.
  • Using a slotted spoon, transfer shrimp to a plate (leave lemon zest behind in pot and discard). Chill in freezer until cool, about 10 minutes.
  • Combine shrimp, celery, cream, and 3 Tbsp. dill in a large bowl; squeeze in juice from remaining lemon half and toss to combine. Season with salt.
