ALOHA QUICK BREAD
This recipe has been a family favorite for several years. The addition of coconut, orange peel, pineapple and nuts gives a new twist to a loaf of banana bread. It's so good I sometimes serve slices of it for dessert. -Lanita Anderson, Chesapeake, Virginia

Steps:
- Preheat oven to 350°. In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in banana, milk, orange zest and extracts. , Combine flour, baking soda and salt; add to the creamed mixture just until moistened. Fold in coconut, nuts and pineapple. Transfer to a greased 9x5-in. loaf pan. , Bake 1 hour and 20 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pan to a wire rack.

This easy to make batter bread brings the sweet and tender flavor of Hawaiian bread home from vacation. This is a recipe for homemade Hawaiian bread. It's sweet, spicy and tender.

Steps:
- In a small bowl, dissolve yeast in 1/2 cup warm water. Let stand until creamy, about 10 minutes.
- In a large bowl, beat together the yeast mixture, eggs, pineapple juice, 1/2 cup water, sugar, ginger, vanilla, and melted butter. Gradually stir in flour until a stiff batter is formed. Cover with a damp cloth and let rise in a warm place for 1 hour.
- Deflate the dough and turn it out onto a well floured surface. Divide the dough into three equal pieces and form into round loaves. Place the loaves into three lightly greased round cake pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
- Bake in preheated oven for 25 to 30 minutes, or until bottom of a loaf sounds hollow when tapped.

- In a small bowl, dissolve yeast in warm water; let stand until bubbles form on surface, 5 minutes. Meanwhile, in a small saucepan, heat butter until melted. Add pineapple juice and whole milk and continue to heat gently until mixture reaches 110° to 115°. In a large bowl, combine 3 cups flour, potato flakes, sugar, salt and ginger. Add yeast and butter mixtures to dry ingredients; beat just until moistened. Add eggs; beat until smooth. Beat in vanilla. Stir in enough remaining flour to form a soft dough; dough will be sticky. , Turn dough onto a floured surface; with floured hands, knead until smooth and elastic, about 8-10 minutes, adding more flour to surface and hands as needed. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1-1/4 hours., Punch dough down. Turn onto a lightly floured surface; divide into thirds. Shape each into a ball. Place in 3 greased 9-in. round baking pans lined with parchment. Cover and let rise until doubled, about 45 minutes. Preheat oven to 350°. Bake until golden brown and internal temperature of loaves reaches 200°, 30-35 minutes, covering loosely with foil during the last 10 minutes of baking if needed to prevent tops from over-browning. Remove from pans to wire racks to cool.

- 1. Preheat overn to 350 degrees
- 2. Grease bottom of 5x9 loaf pan
- 3. In a large mixing bowl, combine flour, sugar, baking soda and salt.
- 4. Stir in butter, eggs, milk, banans,coconut, pineapple, orange rind, vanilla extract and almond extract.
- 5. Beat on low speed until all ingredients are moistened.
- 6. Beat at medium speed for 2 minutes.
- 7. Stir in Pineapple and coconut.
- 8. Pour into a prepared pan and bake for 70 minutes or until a wooden toothpick comes out clean when inserted into the center of the bread.
- 9. When ready, immediately remove the bread from the pan an onto a plate.
- 10. Cool completely before slicing.
TROPICAL FRUIT BREAD
This is a festive bread for the holidays. Try packaging it up in some nice cello paper and tie a ribbon around it.

- Heat oven to 350°F
- Grease and flour bottom ONLY of 8x4 or 9x5 inch loaf pan.
- In a large bowl, combine quick bread mix, water, oil and egg.
- Stir for 50-75 strokes with spoon till moist.
- Stir in fruit and orange peel.
- Pour batter into greased prepared pan.
- Bake 350 for 55-60 minutes for 8x4 pan, or 45-55 minutes for 9x5 pan.
- test with toothpick to see if its done.
- Cool on wire rack for 15 minutes.
- remove from pan and cool 30 minutes till totally cooled.
- in small bowl, blend powdered sugar and orange juice till desired glaze consistency.
- brush over loaf.
- wrap tightly and store in fridge.
TROPICAL COCONUT BREAD
Having a Luau party? Then this is a must but, you'll want to make this throughout the year. The smell alone will get your significant other to release their grip on the remote, the kids will drift out of their bedrooms and the neighbors might come knocking. I dare to say, this might even be an aphrodisiac! It's great alone but if you're adventurous, slice some strawberries on it or drizzle chocolate syrup over it and top it with some whipped cream.

- Grease and flour two 9 1/2" x 5 1/2" loaf pans.
- Do not use a mixer with this recipe.
- Use a spoon or spatula and stir by hand.
- In medium mixing bowl, combine flour, baking powder, baking soda, and salt; mix well.
- In large mixing bowl, combine sugar, oil, beaten eggs, and coconut extract; mix well.
- Alternately add flour mixture and buttermilk to sugar mixture and stir only until moist.
