When you warm lettuce in butter and wine it gets velvety and rich-a perfect foil to the toothsome, sweet peas. Serve spooned over slices of quiche for brunch.

Steps:
- Melt butter in a large wide saucepan over medium-low heat. Cook leeks, partially covered and stirring occasionally, until tender but not browned, 5-7 minutes. Season with 1 tsp. salt and 1/2 tsp. pepper, then pour in wine. Increase heat to medium-high and continue to cook, stirring occasionally, until wine is reduced by half, 1-2 minutes. Add lettuce, peas, and 1 cup water. Partially cover pan and bring liquid to a simmer. Reduce heat to medium-low to maintain a gentle simmer and cook, stirring occasionally, until lettuce and peas are tender, about 5 minutes.
- Remove from heat, then stir in chives, mint, and lemon zest; season with salt and pepper. Transfer to a platter. Top with pistachios.

- Gently soften the leeks in butter and oil in your largest pan for 15-20 mins until almost meltingly soft. You can soften the leeks up to a day ahead, then just reheat in the pan before continuing the recipe. Stir in the stock, bring to a simmer and cook, stirring occasionally, for 5 mins. Stir in the peas and spring onions for 3-5 mins more until the peas are defrosted and cooked through, then season and serve.

Steps:
- Lightly toast the bread on both sides.
- Melt the butter in a small pan. Add the leek and cook gently, stirring now and then, for 5 minutes.
- Add the pear and sage and cook for 1 minute. Set aside.
- In another saucepan, put the cheese, egg yolk, mustard and stout. Stir over a gentle heat until the cheese melts and forms a creamy mixture. Season with salt and freshly ground pepper.
- Preheat the broiler.
- Divide the leek and pear mixture on top of the toast and then pour over the cheese sauce.
- Broil under a hot broiler until bubbling and brown. Serve at once.

- Put the leeks in a pan with 250ml wine, the stock, mustard, thyme and 20g of the butter. Add a pinch of salt and bring to a brisk simmer. Reduce the heat and cook for 10-15 minutes until the leeks are tender. Drain (discard the liquid) and set aside.
- Heat the grill to medium-high. Melt the remaining butter in a pan and stir in the 2 tbsp white wine. Take off the heat and stir in the cheese and egg yolks to make the rarebit. Season.
- Toast the bread under the grill for 2-3 minutes on each side until golden. Divide the leeks evenly among the toasts and top with the rarebit mix. Grill for 3-4 minutes until bubbling.
- Meanwhile, heat the oil in a frying pan and fry 4 eggs for 3-4 minutes or until cooked to your liking. Serve the rarebit topped with the fried eggs and a good splash of Henderson’s or Worcestershire sauce and dig in.
