SIMPLE, PERFECT CHILI

Steps:
- Place the ground beef in a large pot and throw in the garlic. Cook over medium heat until browned. Drain off the excess fat, and then pour in the tomato sauce, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover, and then reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the mixture becomes overly dry, add 1/2 cup water at a time as needed.
- After an hour, place the masa harina in a small bowl. Add 1/2 cup water and stir together with a fork. Dump the masa mixture into the chili. Stir together well, and then taste and adjust the seasonings. Add more masa paste and/or water to get the chili to your preferred consistency, or to add more corn flavor. Add the beans and simmer for 10 minutes. Serve with shredded Cheddar, chopped onions, tortilla chips and lime wedges.
5 BEAN CHILI
Steps:
- In a skillet over medium-high heat, brown ground beef with the onions. Be sure to break up clumps as much as possible. Put the mixture in a slow cooker.
- Add remaining ingredients and stir together. Cover and cook on high setting for 4 hours or on low for 7 to 8 hours.
- Ladle into bowls and serve with your favorite chili fixings.
CHICKEN CHILI

- Heat the olive oil in a Dutch oven over medium heat. Add the onion and cook until tender and translucent, 5 to 6 minutes. Add the chicken and cook, using a wooden spoon to break it up as it browns, about 5 minutes. Mix in the taco seasoning and 1/4 cup water. Cook for 3 minutes. Add the tomatoes, salsa, beans, corn, salt and pepper. Bring to a simmer, reduce the heat to low, cover and cook until reduced slightly and heated through, about 20 minutes. Serve with sour cream, cheese, scallions and jalapenos.
LEE'S QUICK AND EASY CHILI
I just made this for the first time yesterday. It came out good but very mild (my wife thinks ketchup is hot). We individually added pepper to our own liking. The original did not have ANY chili powder or cayenne pepper so as it is, this is not fully tested.

- 1. Brown meat and drain excess fat
- 2. Add diced onion and peppers, cook 2-3 minutes
- 3. Add tomato sauce, water, beef bouillon, and canned beans
- 4. Add seasonings adjusting to taste (this is very mild)
- 5. Bring to boil, reduce heat and simmer for 15 minutes, mix ingredients in thickener section and add to chili, bring back to a boil and boil for 1 minute.
