Lekvar (Prune Filling or Prune Butter) image

Steps:

  • 1. Combine everything into a saucepan (except brown sugar) and cook on low heat, stirring every few minutes. Heat to boiling.
  • 2. Lower heat to simmer, cover pan and cook for 20 minutes, stirring every few mins.
  • 3. Remove lip from pan and add brown sugar. Cook, reducing liquid and stirring every few minutes. Be sure not to scorch. Mash with a wooden spoon until prunes are soft and broken up and mixture is thick until the consistency is like oatmeal (about 20 more minutes so be patient). It will thicken more when cooled.

2 c dried prunes
1 c water
1/4 c orange juice
1 Tbsp lemon juice
1/2 tsp salt
1 dash(es) clove
1 dash(es) cinnamon
1/3 c brown sugar

HUNGARIAN CREAM CHEESE COOKIES WITH PRUNE LEKVAR

This is a very flaky cookie that has been in my family years. My grandmother passed it down to all. I've seen it called many other names but in my house we've nicknamed it: Mom's Hurry Up Cream Cheese Cookies, because if your kitchen is too warm they do become a bit difficult to handle. So if you plan on having a day of baking.... do these first! You're gonna love them. NOTE: Very easy to make total time includes refrigeration of 1 hr if your kitchen is warm from holiday baking.

Hungarian Cream Cheese Cookies With Prune Lekvar image

Steps:

  • Cream together the cream cheese and butter.
  • To this, add the flour - in small portions by hand.
  • When it comes together, turn over on a lightly floured surface and add the rest of the flour to form a dough (IT WILL BE SOFT - but it should be smooth)
  • Refrigerate for about 1 hour.
  • Roll out to about 1/4 inch thick on a floured surface.
  • Cut into squares about 2 x 2 and fill center with about 1/4 tsp of the lekvar.
  • Bring together opposite corners and pinch and fold over.
  • Bake on a lightly greased baking sheet for about 15 - 20 minutes until lite gold at 350F (Be careful not to let them burn).
  • While still warm, role in powdered sugar and let cool.
  • Once cooled, repeat the powdered sugar coating once more.
  • You can use any flavor lekvar or even an almond paste.
  • It just has to be really thick so it doesn't run while baking.

Steps:

  • Put the prunes in a good sized saucepan-heavy bottom if you have one.
  • Pour in water to cover, bring to a boil, reduce heat and cook over a"hard simmer/light boil.
  • "You may need to add more water to prevent scorching.
  • When prunes are soft puree in a food processor until smooth.
  • If the prunes are in any way runny cook until thick.
  • Make dough-or cut recipe in half and fill with prune filling.
  • (see recipe#20108 for filling and crimping directions) Boil perogies in water until they float, drain.
  • Fry in butter if you wish and serve with a dollop of vanilla ice cream or topping of your choice.
  • Freeze whatever filling your not using.

Steps:

  • Combine water or orange juice, lemon juice, prunes, raisins, sugar and cinnamon in a small saucepan over a low heat.
  • Simmer for 8 to 10 minutes, tossing and stirring the fruit to soften the prunes and plump the raisins.
  • Make sure the bottom does not stick and the mixture doesn't boil.
  • Remove pot from heat and allow contents to cool for 5 minutes.
  • Add cinnamon and walnuts, if using, and process in food processor until it forms a thick puree.
  • Add a bit more orange juice or water to thin the puree if necessary.
  • Taste and add 1 tablespoons of sugar at a time until filling is desired sweetness.
  • Filling should be thick and moist.
  • Chill filling slightly before using.
  • Will keep in the fridge for up to 2 weeks or in the freezer for up to 6 months.
  • If chilled filling is too stiff to spread, loosen with a bit of warm juice or water.

Grandma Skeet's Prune Kolaches image

Steps:

  • Place the warm water, salt, egg and 2 tablespoons butter in the pan of a bread machine. Add bread flour, and pour 1/4 cup sugar on the edge of the pan. Make a shallow hole in the flour and add the yeast. Close the lid, and set machine for the DOUGH cycle.
  • While the dough is mixing, combine the prunes, prune juice, 1/4 cup sugar, cinnamon, cloves and lime juice in a saucepan. Bring to a boil, then reduce heat to low, and simmer until prunes are soft and the sauce has thickened, about 15 minutes. Remove from heat and blend in a mixer or food processor until smooth.
  • When the bread machine signals the end of the dough cycle, transfer the dough to a lightly floured surface. Divide the dough into 20 small egg-sized pieces. Cover with greased plastic wrap, and set aside for 10 minutes.
  • In a small bowl, mix together 1 cup sugar and 1/2 cup flour. Stir in melted butter and 1 teaspoon cinnamon to make a crumbly streusel.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a large baking sheet or line it with parchment paper.
  • Shape the kolache dough into balls and place them on the prepared baking sheet. Press a shallow hole in the center of each one, and fill with prune filling. Top each of the kolaches with streusel. Let the kolaches rest until doubled in size, about 20 minutes.
  • Bake until the tops are lightly browned, 14 to 16 minutes.

  • Uncover last few minutes if necessary.

Steps:

  • In a large bowl, dissolve yeast in warm milk. Add the butter, shortening, egg yolks, sugar and salt and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough.
