LEMON AND CHERRY TRIFLE
Cherry-lemon trifle -- made with layers of lemon curd, poached and fresh cherries, wafer cookies, candied zest, and whipped cream -- is a sweet-and-tart study of its namesake fruits.

- In the bowl of an electric mixer fitted with the whisk attachment, beat cream until soft peaks form. Layer lemon curd, cherries, cake pieces or wafers, and whipped cream in tall glasses. Cover with plastic wrap; chill in refrigerator up to 2 hours. Serve; garnish each trifle with a fresh cherry.

- Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in lemon zest and extract. In another bowl, whisk together flour, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. Cover and refrigerate at least 2 hours., Preheat oven to 375°. Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until lightly browned, 7-10 minutes. Remove to wire racks to cool.

- In a large bowl, cream butter and sugars until light and fluffy. Beat in the egg, cherry and lemon juices and vanilla. Combine dry ingredients; gradually add to creamed mixture and mix well. Stir in nuts and cherries. , Shape into four 12-in. rolls; wrap each in plastic wrap. Refrigerate for 4 hours or until firm. , Unwrap and cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake at 375° for 8-10 minutes or until the edges begin to brown. Remove to wire racks to cool.

- In stand mixer combine butter and sugars. Beat until light and fluffy. Add kool-aid, vanilla and eggs. Mix well, then add flour, baking powder and salt. Mix until all combined. Divide dough into two 8x2-inch logs. Wrap in plastic and chill for at least one hour. Preheat oven to 350°F. Line cookie sheet with parchment. Remove cookie logs from refrigerator. Cut into 1/2 inch slices. Bake for 10 to 12 minutes. Remove from oven and cool on cookie rack. LIMEADE FROSTING: Beat butter, icing sugar, kool-aid and milk together until frosting is fluffy, adding more milk if needed. Frost cooled cookies using a piping bag or just spread frosting on top of cookies. Complete with cherries on top of each cookie.

- Preheat oven to 350F, line an 8-by-8-inch pan with aluminum foil, spray with cooking spray; set aside. Add butter to a large microwave-safe bowl and heat on high power to melt, about 1 minute. Wait for butter to cool for a minute or two before adding the egg (so you don't scramble it). Add the sweetened condensed milk, lemon juice, vanilla extract, optional lemon extract, and whisk until smooth. Add the flour, lemon zest, optional salt, and stir to incorporate. Gently fold in the cherries. Transfer batter to prepared pan and bake for 19 to 23 minutes, or until center is just set; don't overbake or it will turn rubbery. Allow bars to cool in pan for at least 15 minutes before removing. Optionally, drizzle with melted white chocolate.
- While the bars cook, melt the white chocolate in a small microwave-safe bowl in 15-second increments in the microwave, stopping after each burst to stir. Heat in bursts until chocolate can be stirred smooth. Note that white chocolate scorches easily and so don't overcook. Some people find it's easier to get it to melt smoothly if they heat it on 50% power. Drizzle bars with melted white chocolate, wait a few minutes until it's set, before slicing and serving. Bars will keep for up to 5 days in an airtight container at room temperature, or in the freezer for up to 3 months.
