LEMON ICE BOX PIE (FROZEN - CRACKER BARREL COPYCAT)
I had the Lemon Ice Box Pie at Cracker Barrel, and was determined to find a copycat. I've adapted this recipe, and I think it fits the bill!

Steps:
- Mix sweetened condensed milk and lemon juice and beat on medium high speed until well blended.
- Fold in 1/3 of the whipped topping and 2 drops yellow food coloring.
- Pour filling into crust; carefully smooth remainder of whipped topping on top of lemon filling.
- Place vanilla wafer cookies around the edge of the pie (can do this right before serving if you prefer a crisper cookie).
- Cover pie and place in freezer.
- Pie may be kept in freezer for several days until ready to serve.
- Take from freezer 10- 15 minutes before serving.

CRACKER BARREL LEMON ICEBOX PIE
This is the creamy summer treat that's served at Cracker Barrel. It's a perfect blend of not too tart, not too sweet. And to top it off, it's a cinch to make. I was a little leery of using raw egg yolks without cooking the pie, but a RecipeZaar Groupie assured me that it's safe.

- Combine milk, egg yolks and lemon juice with a wire whip.
- Pour into pie shell.
- Arrange vanilla wafers around pie, pushing into the filling so that only half the wafer is showing.
- Spread Cool Whip over top evenly.
- Cover with plastic wrap and freeze for at least 2 hours.
- Serve very cold.

- For the crust: Preheat the oven to 350 degrees F.
- Break the graham crackers, add them to a food processor and process to fine crumbs. Add the melted butter and granulated sugar and process until well combined; the texture should be that of dry sand.
- Using the back of a measuring cup, press the crumbs firmly into a 9-inch round pie dish. Put the pie dish on a baking sheet and bake until slightly golden, about 5 minutes. Set aside to cool while making the filling.
- For the filling: In a stand mixer fitted with a whisk attachment, whip the cream, powdered sugar and vanilla until stiff. Set aside.
- To a clean mixing bowl, add the lemon curd, cream cheese and sweetened condensed milk and beat until smooth. Gently fold 3/4 cup of the whipped cream into the lemon curd mixture until combined.
- Pour the filling into the cooled pie shell. Top with the remaining whipped cream and use the back of a spoon to spread it and make peaks. Freeze, uncovered, for at least 2 hours. (If storing longer, after 2 hours in the freezer remove, cover and return to the freezer. Store for up to 48 hours in advance. If freezing overnight or longer, remove from the freezer 10 to 12 minutes before slicing.)
- For serving: If desired, top with the blackberries, raspberries and mint. Dust with powdered sugar.

- Preheat the oven to 325°. In a food processor, pulse the graham crackers with the sugar and salt until finely ground but not powdery. Add the butter and pulse until the crumbs are evenly moistened; transfer to a 9-inch springform pan and press into the bottom and two-thirds up the side. Set the pan on a rimmed baking sheet.
- In a medium bowl, whisk the condensed milk with the lemon juice. In another bowl, using a handheld mixer, beat the lemon zest with the egg yolks until pale. Beat in the condensed milk mixture until smooth. Pour the filling into the crust.
- Bake the pie for 25 minutes, until the center jiggles slightly and the edges are set. Transfer the pan to a rack; let cool for 1 hour. Loosely cover the pan with plastic wrap and freeze the pie for at least 6 hours.
- Wrap a warm, damp kitchen towel around the side of the springform pan to release the pie; remove the ring. Using a hot knife, slice the pie, transfer to plates and serve.

- Pat in place along sides and bottom of plate.
- Refrigerate until set.

- Crumble cooled prepared cake and measure 2 cups of crumbs, pat crumbs lightly down when measuring. Place crumbs in a small bowl and mix in the sugar. Spray a none stick spray in 9" pie pan and pat cake crumbs in pie pan along the sides and on the bottom. Place pie crust in a preheated oven at 275 for 7 minutes.
- Watch crust carefully so the crumbs will not scorch. This process will help to lightly set the crust. When done remove and cool crust. Filling In a 2-quart saucepan mix sugar, flour, salt, and milk. While stirring constantly bring ingredients to a low boil and cook for two or three minutes until filling becomes thick.
- Remove pan from heat and add 1/2 cup of hot mixture to beaten egg yolks and whisk together. Place filling back on stove at a low heat and slowly pour egg yolks into filling while whisking together. Pour lemon juice and vanilla into filling and bring to a soft boil and cook for two to three minutes long. Using a whisk throughout the cooking helps to eliminate lumps. When filling is thick remove from heat and set aside to cool down.
- The filling may be poured into the crust while still a little warm but not hot. Place pie in refrigerator for several hours to set and chill completely. When chilled, top with whipped topping and sprinkle the two tablespoons of crumbled cake crumbs. Fresh lemon zest may be added to garnish. Please note if you can not find Jiffy Cake mix, you can use a regular cake mix, but you will have twice as much crust than you need. So making two pies might be a solution.
