LEMON OR LIME PIE PALETAS (POPSICLES)

Based on a recipe from dallasnews.com featuring the fun new book Paletas, a book of recipes for Mexican ice pops by Fany Gerson. Recipe originally published in The Dallas Morning News on August. 17, 2011.

Lemon or Lime Pie Paletas (Popsicles) image

Steps:

  • Place the sweetened condensed milk, half-and-half, juice, zest and salt in a bowl and whisk until thoroughly combined.
  • If using conventional molds, divide the mixture among the molds, snap on the lid and freeze until solid, about 8 hours.
  • If using small paper cups, freeze until pops are beginning to set (1-1/2 to 2 hours), then insert the sticks and freeze until solid, about 8 hours.
  • If using an instant ice pop maker, follow the manufacturer's instructions.
  • To serve as Mexican Lemon or Lime Pie Paletas, remove from molds and press or roll pops into finely crushed graham cracker crumbs spread on a plate!
  • Serve immediately before they melt!

Lemon Meringue Pie Pops image

Steps:

  • In medium bowl, beat pudding mix and half-and-half with whisk 2 minutes. Beat in lemon juice and yogurt.
  • Pour about 1/3 cup mixture into each of 7 (5-oz) paper cups. Sprinkle each with 1 tablespoon graham crackers. Cover cups with foil; insert craft stick into center of each pop. (Or fill ice pop molds according to manufacturer's directions.) Freeze about 6 hours or until frozen.
  • When ready to serve pops, in small bowl, beat marshmallow creme and 1 tablespoon of the whipping cream with electric mixer on low speed until smooth. Add remaining whipping cream, increase speed to high and beat until stiff peaks form. Remove each pop from cup. Spread top of each with about 2 tablespoons marshmallow mixture, forming meringue peaks.

Steps:

  • Put the sweetened condensed milk, half-and-half, lime juice, lime zest, and salt in a bowl and whisk until thoroughly combined.
  • If using conventional molds, divide the mixture among the molds, snap on the lid, and freeze until solid, about 5 hours. If using glasses or other unconventional molds, freeze until the pops are beginning to set (1 1/2 to 2 hours), then insert the sticks and freeze until solid, 4 to 5 hours. If using an instant ice pop maker, follow the manufacturer's instructions.
  • Spread the graham cracker pieces on a large plate. Unmold the paletas and press each side into the graham crackers, coating completely.

1 (14-ounce) can sweetened condensed milk
1 cup half-and-half
3/4 cup freshly squeezed lime juice (about 4 large limes)

Steps:

  • In a medium saucepan, combine sugar, cornstarch, flour and salt. Gradually stir in water. Cook and stir over medium heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes more. Remove from the heat. Gradually stir 1 cup of hot mixture into egg yolks; return all to saucepan. Bring to boil. Cook and stir for 2 minutes. Remove from the heat. Stir in the butter, lemon juice and zest until smooth. Pour into pastry shell. In a bowl, beat egg whites and salt until stiff but not dry peaks are formed. Gradually beat in sugar until soft peaks form. Spread over pie, sealing edges to pastry. Bake at 350° for 12-15 minutes or until meringue is golden. Cool. Store any leftovers in the refrigerator.

  • In a bowl whisk together the condensed milk and half and half. Whisk in the zest, lemon juice, vanilla, salt and food coloring. Pour mix into a large measuring cup. Get your molds ready.
  • Add 1 teaspoon of crushed cookies to each mold. Pour in the paleta mix into each mold until almost filled. Add more cookie crumbs to the bottom of each paleta. Freeze for 2 hours, then insert the sticks. Freeze for another 4-5 hours.
  • When ready, remove from freezer and let sit for a few minutes. Spread the remaining cookie crumbs onto a plate. One at a time, gently run the paleta under warm water. Slowly remove from mold. Quickly dip the paleta into cookie crumbs on both sides and place onto plate. Place the plate in the freezer as you finish the remaining paletas. I would suggest letting the paletas firm up a little more on the plate.
