LEMONY SALMON & RICE

This is my own concoction, something I threw together when I needed something quick and a little different. To my surprise I found it was quite tasty! Sometimes I use white rice, sometimes brown, or even wild. And I may use pine nuts or slivered almonds--maybe even chopped pecans or walnuts. It's fun to experiment with this dish and it always comes out delicious!

LEMONY SALMON & RICE image

Steps:

  • Place one bag of rice into boiling water in a medium size pot; simmer for 10 minutes. Pour out water and empty the rice into the pot.
  • Add the salmon, having discarded about half of the liquid from the can. Flake salmon into rice. Add the nuts and lemon juice. Stir gently until all is mixed.
  • Heat about 5 more minutes, just until mixture is hot. Season with salt and pepper to taste.

1/4 cup(s) pine nuts or other chopped nuts
2 teaspoon(s) lemon juice

LEMON RICE WITH CRISPY SALMON

This recipe from Minute Rice uses just three main ingredients, takes ten minutes to prepare, and can be on the table in just over a half-hour. One plus one plus one and you're done. Now, that's a weekday win.

Lemon Rice With Crispy Salmon image

Steps:

  • Cook rice according to package directions. Add peas during the last minute of cooking; stir in half of the green onion, and lemon juice.
  • Meanwhile, using a sharp knife, score skin side of salmon, slicing 1/2-inch (1 cm) across and about 1/4-inch (5 mm) deep; season all over with salt and pepper.
  • In large, heavy-bottom skillet, heat oil over medium-high heat; cook salmon skin side down for about 5 minutes or until skin is golden brown and crispy. Turn over; cook for 2 or 3 minutes or until fish is just cooked through and flakes easily with a fork. Serve with rice and lemon wedges. Sprinkle with remaining green onion.

2 (125 g) envelopes minute rice jasmine rice
3/4 cup frozen peas, thawed
1/4 cup sliced green onion
2 tablespoons lemon juice
4 skin-on salmon fillets (5 to 6 oz/140 to 170 g each)
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons canola oil

Salmon fillets with lemon rice image

Steps:

  • For the rice, rinse under cold running water. Bring the lemon rind, juice and stock to the boil in a saucepan. Add the rice and tomatoes and simmer for approx 12-15 mins. Season with plenty of black pepper if you like. Becareful not to let it boil dry, stir frequently.
  • Meanwhile mix the parsley, lemon rind and chilli flakes together and press on to the top of the salmon fillets. Pre head the grill to a medium heat. Then drizzle with the oil and cook the fillets.
  • Just before the rice is ready, stir in the red onion, parsley, sweetcorn and peas. Warm these through. At this point add the feta to the top of the fillets and grill until golden in colour.
  • Remove the rice from the heat and stir in the creme fraiche.
  • Spoon the rice mixture on to plates and top with the salmon fillets

225g Long Grain Rice
Grated rind and juice of 1 lemon
900ml Vegetable Stock
100g Frozen Peas
100g Frozen or tinned Sweetcorn
400g Can of chopped Tomatoes
1tbsp Fresh chopped Parsley or Coriander
1/2 Red onion, shredded
2tbsp Creme fraiche
4tbsp Fresh chopped Parsley or Coriander
Grated rind of 1 lemon
A good pinch of chilli flakes
4 Salmon Fillets
2tbsp Olive oil
4 Slices of Feta or Salad cheese

  • Heat the oil in a large skillet over medium heat. Add the leeks and onion along with a pinch of salt and cook, stirring occasionally, until just tender, 6 to 8 minutes.
  • Stir in the garlic and rice cook for 2 minutes, stirring to make sure rice is coated in a little oil. Add the wine, lemon juice, and zest and season with salt and pepper (we add about 1/2 teaspoon each) and cook, stirring, until the wine is absorbed, about 2 minutes.
  • Add the broth and bring to a boil. Reduce heat to low and simmer, uncovered, until the liquid has absorbed and the rice is tender, 18 to 20 minutes. Remove from heat and stir in cream cheese, Parmesan and parsley. Set aside while you cook the fish.
  • Pat salmon dry and season only the skin-side with salt. Heat oil in a cast-iron pan over medium-high; add salmon, skin-side down and gently press each fillet with a spatula to ensure even contact with the pan. Cook until the skin is crispy, about 3 minutes. Season the flesh side with salt and pepper, then flip and cook a further 1-2 minutes. Transfer lemon rice to a serving platter (or dinner plates) and top with salmon. Garnish with lemon slices and parsley, if desired.

  • Preheat oven to 400°. Pat four 6–8 oz. skin-on salmon fillets dry with a clean kitchen towel or paper towels. Place in a large glass or ceramic baking dish; drizzle with 2 Tbsp. extra-virgin olive oil and season all over with kosher salt and freshly ground black pepper. Rub salmon to coat and arrange skin side down.
  • Crush 1 tsp. saffron threads in a mortar and pestle (a small bowl and the handle of a wooden spoon also work well) until it’s mostly powder (it’s okay if it’s not perfectly powdery). Transfer to a small bowl and pour in 1 Tbsp. plus 1½ tsp. warm water. Stir until an intense sunset-orange hue and most of the saffron is dissolved (it will look like little crimson dots floating in an orange pool). Cut 2 lemons in half and squeeze juice into bowl, using your hand or a sieve to catch any seeds. Pour liquid over salmon, then turn fillets skin side up. Let sit at room temperature at least 15 minutes or until you’re at a stopping point with the rice.
  • While the salmon is marinating, make the rice. Using a chef’s knife, finely chop 1 cup dill leaves with tender stems as small as possible; set aside. Place 1 cup high-quality basmati rice in a fine-mesh sieve and rinse under cold running water, using your hand to agitate rice until water runs mostly clear. Shake off excess water.
  • Transfer rice to a small saucepan and add remaining 3 Tbsp. extra-virgin olive oil, 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, and 2 cups room-temperature water; stir to combine with a wooden spoon. Bring to a boil, then reduce heat and stir in reserved dill. Simmer, stirring occasionally, until most of the water is absorbed and rice is mostly tender with a still-hard center, 5–8 minutes. (Taste a few grains to check!)

  • Rinse and drain the rice. Combine the rice, coconut water, salt, and coconut oil in a medium saucepan and bring to a boil.
  • Cover with a tight-fitting lid, reduce the heat to a low simmer, and cook for 45 minutes. Check a few times, especially towards the end as the rice cooks. If at any point it looks like it is becoming dry or sticking, splash in additional coconut water as needed.
  • Remove from the heat. Add the lemon zest and lemon juice and then fluff with a fork to combine. Cover and let rest for 10 minutes. Stir in the parsley. Enjoy warm.
