AGUA DE SANDIA (WATERMELON)

- Puree the diced watermelon with 4 cups cold water in blender. Blend until smooth, and then pour into a pitcher - any ground seeds should remain in the bottom. Add 6 cups cold water and sweeten with sugar, as needed. Garnish with lime wedges.
MELON LIQUADO
Steps:
- Combine the fruit with the milk, ice and honey in a blender or food processor and puree until smooth. Pour into tall glasses and serve immediately.
SPICED BANANA LICUADO
This recipe came from a friend in my gourmet class from college. We did a beverage unit and we were to make a family favorite. She was from the southwest and her dad's family was from Mexico. I had never heard the word "licuado" used in a recipe before. I enjoyed the drink, but haven't made it in a while.

A licuado is a Latin American smoothie. Actually, I suspect that a smoothie is a North-of-Mexico licuado. This is refreshing on a hot day. It is also good with pineapple instead of mango.

Steps:
- Peel the watermelon, cut the flesh into chunks and discard any seeds.
- Tip the chunks into a large bowl - pour over the chilled water and leave to stand for 10 minutes.
- Spoon the mixture into a large sieve set over a bowl. Using a wooden spoon, gently push the fruit through the sieve to extract all the liquid.
- Stir in the lime juice and sweeten with honey to taste.
- Pour into a jug, add a generous handful of ice cubes and stir to mix. Serve in tumblers.

LICUADOS
Steps:
- Pineapple Licuado
- In the jar of a blender, add all the ingredients and pulse briefly until the pineapple chunks are finely chopped (but not a puree). You will have to add the ingredients in 2 batches. Strain through a medium-mesh strainer. Chill well in the refrigerator. Serve over ice with a garnish of fresh pineapple.
- Tangerine Licuado
- Combine all ingredients in a large bowl and whisk to blend. No need to strain. Chill well in the refrigerator. Serve over ice with a tangerine wheel for garnish.

- Bring the water to a boil in a small pan. Remove from heat and add the mint leaves. Stir briefly, then cover the pan and allow to cool to room temperature. Strain the mixture into a measuring cup, pressing the leaves in the strainer to extract as much water as possible. Add enough water to equal 1 cup of mint water. Cover and refrigerate until thoroughly chilled.
- If your fruit is fresh: Peel the peach then slice it and freeze it in a single layer on parchment. Freeze the raspberries in a single layer on parchment as well. This can be done while you're making and chilling the mint water.
