Light Sweet Potato Mash Microwave Recipes
MASHED SWEET POTATOES IN THE MICROWAVE
My family loves this sweet potato recipe for the microwave, even my 2-year-old. It's fast and easy and I don't have to think about it much.

Steps:
- Poke holes along each side of the sweet potato with a fork, at least 4 sets on each side.
- Microwave the potato on high for 8 minutes. Turn over and continue to cook in the microwave until tender, about 8 minutes more.
- Cut potato in half and remove soft potato flesh into a bowl with a spoon. Mash the potato with a fork and mix with cream cheese and butter.

Steps:
- Boil the potatoes in salted water for 10 mins or until tender, how long they take will depend on the size of the cubes. Drain very well and leave to steam dry for a couple of minutes.
- Tip the potatoes back into the pan and mash with 1 tbsp butter using a fork or masher, then season well. Serve with the extra butter and more seasoning on top.

Steps:
- Wash sweet potatoes and prick several times all over with a fork.
- Place in a microwave on top of a paper towel and cover with another paper towel. Cook on high for 5 minutes (may need more depending on strength of microwave and thickness of potato).
- Turn the potatoes over and cook for another 5 minutes. Remove potatoes and test for softness. If not soft, cook for 1 to 2 minutes more. Wrap potatoes in aluminum foil and allow to cool, 1 to 2 minutes.
- Slice them open and add butter, honey, cinnamon, and salt. Mash the soft flesh with a fork.

If you do not have a potato button, microwave for 7 minutes, and then cook in 30 second increments as needed. Ensure the potatoes are fork tender and then remove from the microwave.
- Remove the skin from the potatoes and discard. Place the potatoes in a food processor or blender. Add the butter, milk and salt and puree until smooth. Serve and enjoy!
