LIGHT CHICKEN AND BROCCOLI BAKE

Cheesy chicken and broccoli bakes are the ultimate comfort food, but I wanted to give the classic casserole a healthier spin. Mine cuts down on fat and calories, but keeps the same cozy flavor. -Jenny Dubinsky, Inwood, West Virginia

Light Chicken and Broccoli Bake image

Steps:

  • Preheat oven to 400°. In a large bowl, whisk together first five ingredients. Stir in broccoli, chicken, onion and 1/4 cup cheese. Transfer to a greased 9-in. pie plate. Sprinkle with remaining cheese., Bake until golden brown and a knife inserted near the center comes out clean, 15-20 minutes. Let stand 10 minutes before serving.

1 small onion, chopped
1/2 cup shredded cheddar cheese, divided

  • Preheat oven to 350 degrees.
  • Mix all ingredients together.
  • Place in a 2 quart casserole dish.
  • Bake for 45 minutes.

1 cup instant rice, uncooked
1/2 cup onion, chopped
1/4 cup nonfat milk
4 ounces light processed cheese, cubed (such as Velveeta Light)
2 tablespoons butter or 2 tablespoons margarine, softened
2 (10 ounce) packages frozen chopped broccoli, thawed and drained
1 (10 3/4 ounce) reduced-fat reduced-sodium condensed cream of mushroom soup

This is one I got from Weight Watchers. It says it's 4 pts per serving. I think it might be good with cauliflower or asparagus in place of the broccoli, too.

  • Thaw and drain the broccoli. Mix all ingredients, pour into a greased casserole pan, and bake at 350 for 15-20 minutes.
  • Note: I would feel free to substitute other fat-free "cream of" soups, and also to change the cheese, as long as you use light or the 2% cheese.

  • Bring a large pot of water to a boil. Add the broccoli and cook for 3-4 minutes until bright green and just tender. Add to a colander and toss with ice and cold water to stop them from cooking longer. Dry well.
  • Make the crispy onion topping. Melt 1/2 tbsp of butter in a pan over medium high heat. Add the onions and cook for 4-5 minutes until tender but still have thier shape. Remove the set aside in a bowl. Add another 1/2 tbsp of butter. Add the breadcrumbs and cook for 2-3 minutes until golden brown. Toss with the onions.
  • Make the mushroom sauce. Melt two tablespoons of butter in a pan. Add the mushrooms and cook for 4-5 minutes until tender. Stir in the garlic and cook for 1-2 minutes until fragrant. Stir in the flour and cook for about 1 minute until light brown. Add the chicken broth and stir until the flour dissolves into the broth. Add the milk and 1/2 cup cheddar cheese. Bring to a simmer and cook for 3-5 minutes until it thickens. Season well with salt and pepper.
