- Heat a large skillet over medium heat; cook and stir beef and onion until beef is browned, about 5 minutes. Drain. Stir tomatoes, water, rice, and taco seasoning into beef mixture and bring to a boil. Reduce heat to medium-low, cover, and simmer until rice is tender, about 25 minutes. Top with Mexican cheese blend and lettuce before serving.

I enjoy preparing one-dish dinners, and this is one of my favorites because it's so easy and attractive. Served with tortilla chips or taco shells, it's a fun meal for everyone. And because it's so festive looking, I put the skillet right on the table when we have company.

Stir in the beans, chilies and garlic powder; cook until heated through., In a small bowl, combine the sour cream, cumin and chili powder; spread over beef mixture. - Heat a large nonstick skillet over medium heat. Cook ground beef, crumbling as it cooks, until browned, about 8 minutes. Drain liquid from pan. Add water and taco seasoning to beef.
- Cook rice according to package directions. Add cooked rice to beef mixture; stir in corn. Increase heat and bring to a boil. Simmer until liquid is absorbed, about 7 minutes, stirring constantly. Remove pan from heat.
- Sprinkle in the cheese and mix to incorporate. Top with green onions if desired. Serve with tortilla chips.

- In a large oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. When the oil shimmers, add the ground beef and onion. Cook, breaking up the meat as it cooks, until the beef is no longer pink, about 5-7 minutes. Drain off fat. Add the garlic, chili powder, smoked paprika, cumin, salt, oregano and cayenne; cook for 1 minute. Stir in the taco sauce, water and diced tomatoes with their juices. Bring to a boil; stir in the rice. Cover and reduce the heat to low. Cook the rice (covered) for 15-17 minutes, stirring occasionally so that the rice doesn't stick to the pan. The rice will be starting to get tender at this point, but it will still be a bit hard.
- Remove from the heat and stir in the lime juice and corn. Sprinkle with cheese and add the crushed tortilla chips on top. Transfer the skillet to the oven and bake, uncovered, for 8-10 minutes, or just until the rice is tender and the cheese is melted.

- Add 1 teaspoon oil to a 12-inch deep skillet or sauté pan (with a lid) and place over medium heat. Add the beef (or turkey) and cook, stirring to break it up, until thoroughly cooked and no longer pink, about 5 minutes. Drain well and transfer the cooked meat to a plate and set aside.
- Add remaining 1 teaspoon oil to your empty skillet and return it to the heat. Add the onion and bell pepper. Sauté for 3 to 4 minutes until softened. Add the frozen corn and the zucchini. Cook, stirring for 3 to 4 minutes, or until the zucchini is fork tender. Reduce heat to low and add the black beans.
- Return the cooked meat to the skillet but do not stir. Sprinkle the chili powder, cumin, garlic powder, oregano, paprika, salt, crushed red pepper, and black pepper over the meat and stir to combine. Stir in the tomato sauce and water and cook and stir for a minute or two. Sprinkle with the cheese, cover, and cook just until the cheese has melted.
- Remove from the heat and keep covered until ready to serve. Sprinkle with green onions just before serving.

- Heat the olive oil in a large, ovenproof skillet or Dutch oven with a tight-fitting lid over medium-high heat. Once hot and shimmering, swirl to coat the pan, then add the beef, onion, and bell pepper. Cook for 3 to 5 minutes, until the beef is browned and cooked through and the onion is beginning to soften.
- Add the chili powder, garlic powder, cumin, oregano, salt, and pepper. Stir to coat the beef and cook 30 seconds. Add the black beans and rice. Stir to coat once more.
- Add the salsa and 1 1/2 cups water. Stir to combine the ingredients. Bring to a gentle boil, cover, then reduce the heat and let simmer 30 minutes. Remove the lid and stir, scraping up any rice that has started to stick to the bottom of the pot. Recover and continue to let simmer with the lid on until the rice is tender, 10 to 20 additional minutes, stirring the pot every 10 minutes or so to prevent sticking. If the rice begins to dry out, splash in the remaining 1/2 cup water as needed.
- Towards the end of the cooking time, place a rack in the upper third of the oven (about 6 inches from the top) and turn the oven to broil. Once the skillet is finished cooking on the stove, sprinkle the cheese on top, then transfer to the oven. Broil just until the cheese is melted, about 2 minutes (watch it carefully so it doesn’t burn). Serve hot with any desired toppings or spoon inside tortillas to make tacos, burritos, or quesadillas.
