LIMA BEANS WITH SMOKED TURKEY

Both my husband & I really love Lima Beans, & I decided to make some for dinner on Sunday. I thought the Smoked Turkey would add just the right amount of flavor to them & they turned out great. Lima Beans with Smoked Turkey image

Steps:

  • 1. In a large pot add the turkey legs and cover with water. Add a lid, then Place on stove top and heat over medium high heat and bring to a boil, reduce heat to a simmer and continue to cook till legs are tender. About 1 1/2 hours more or less as desired. When legs are tender and meat begins to pull away from the bone
  • 2. Remove legs from pot, to a large platter and allow to cool.
  • 3. Add the lima beans to the boiling water, and return to a boil, adding additional water to cover beans if desired,cover and cook over medium high heat. Add spices, onion, minced garlic, and stir to blend but continue to cook. Stir often to prevent sticking.
  • 4. While beans are cooking, remove all of the bones, fatty tissue, skin & splinters from the turkey legs. Then chop into nice size pieces.
  • 5. Add turkey back into pot during last half hour or so of cooking, and cook until beans are tender or desired consistency is reached.
  • 6. Remove from heat and serve while still hot, add corn muffins or corn Bread or your favorite bread of choice, and enjoy.

2 smoked turkey legs or parts of your choice
3 lb frozen lima beans
1 medium fresh onion chopped (or 1/3 cup dried minced onion)
2 Tbsp dried chopped chive
2 tsp each coarse black pepper, kosher salt,& garlic powder
3 clove garlic, minced (we love lots of garlic)
1 1/2 tsp onion powder
2 tsp sugar

Layering the ingredients with the beans on the bottom ensures proper cooking of this satisfying and flavorful turkey stew. The beauty of making this stew in a slow-cooker is that you can set it and forget about it.

Slow-Cooker Turkey Stew with Lima Beans image

Steps:

  • In a slow cooker, cover beans with cold water; let sit overnight. Drain beans and return to slow cooker.
  • Season turkey with salt and pepper. In a large skillet, heat 1 tablespoon oil over medium-high. In two batches, brown turkey on all sides, adding 1 tablespoon oil for second batch, about 10 minutes total. With a slotted spoon, transfer meat to slow cooker. Return pan to heat and add 1 tablespoon oil, onion, and garlic. Cook, stirring occasionally, until onion is translucent, 4 minutes. Add wine and bring to a boil, stirring and scraping up any browned bits with a wooden spoon. Boil 1 minute, then add mixture to slow cooker.
  • Add 1 1/2 cups water and lemon zest to slow cooker. Season with salt and pepper. Cover and cook on high 6 hours. (Beans should be tender and turkey will be just beginning to fall apart.) Add lemon juice and stir. Serve stew with lemon wedges.
