LEMON POSSET
This is the easiest lemon dessert I have ever made, it uses only three ingredients and will always impress guests.

- In a saucepan, stir together 3 cups of cream and sugar. Bring to a boil, and cook for 2 to 3 minutes. Stir in the lemon juice. Pour into serving glasses, and refrigerate until set, about 5 hours. Pour a little more cream over the tops just before serving.

LEMON POSSET WITH SUGARED-ALMOND SHORTBREAD

- Make the posset first. Put the cream in a big saucepan with the sugar and gently heat, stirring, until the sugar has melted. Bring to a simmer and bubble for 1 min. Turn off the heat and stir in the lemon zest and juice. Divide between pots or bowls, cool to room temperature, then carefully cover and chill for at least 3 hrs, or up to 24 hrs.
- To make the shortbread, heat oven to 160C/140C fan/gas 3. Whizz the butter and flour together in a food processor until no lumps of butter remain (or rub together with your fingertips). Tip into a bowl and stir in the sugar, ground rice and almonds. Line the base of a roughly 22cm square tin with baking parchment. Tip in the mixture and press it down firmly, making it as flat as you can. Dredge with more sugar and bake for 25-30 mins until pale golden. Cool in the tin.
- Cut the shortbread into shards and serve with the possets and little spoons.

- Bring cream and 3/4 cup sugar to boil over medium-high heat, stirring until sugar dissolves. Boil 3 minutes, stirring constantly, adjusting heat as needed to prevent mixture from boiling over.
- Remove from heat.
- Stir in lemon juice and lime juice and cool 10 minutes.
- Stir mixture again and divide among six 1/2-cup ramekins or custard cups.
- Cover and chill possets until set, at least 4 hours or overnight.
- Mix remaining 1 teaspoon sugar, lemon peel, and lime peel in small bowl. Sprinkle on top of possets.

- Put the cream and sugar in a small saucepan. Heat until just boiling, then boil vigorously for 2½ mins, while stirring constantly. Turn off the heat, stir in the lime juice and most of the zest and divide between 2 small pots or glasses. Chill for at least 2 hrs (or overnight if you're making ahead), until set.
- To serve top each posset with a few raspberries and the remaining zest.

THE POSSET
Steps:
- Combine whipped cream, sugar, saffron, milk and honey in a saucepan over medium heat, and boil 3 minutes. Remove from heat. Stir in lemon and lime juice, and grated lemon and lime peel.
- Let cool 10 minutes. Stir again, then strain and refrigerate until ready to use. This base will make enough for 4 servings.
- For each drink, combine the sherries with about 6 ounces of the posset base, shake with ice in a cocktail shaker, and strain into a chilled cocktail glass. Dust lightly with ground cinnamon and serve.

- In a medium saucepan over medium heat, combine the heavy cream, sugar, lemon zest and salt. Bring to a simmer, stirring frequently to dissolve the sugar. Simmer vigorously (meaning somewhere between a gentle simmer and boiling, which was a bit below medium-low on my stovetop), stirring regularly, until the mixture thickens slightly and reduces to 2 cups (test by pouring into a measuring cup to be sure), about 8-10 minutes.
- Remove the pot from the heat and stir in the lemon juice. Let the mixture sit until it has cooled slightly and a skin forms on top, about 20 minutes. Stir mixture. To remove the zest in the mixture (optional), strain through fine-mesh strainer into a measuring cup with a spout. Discard zest. Pour mixture evenly into six small ramekins or small custard bowls.
- Refrigerate, uncovered, until set, at least 3 hours. *For longer refrigeration, cover the top with plastic wrap after the 3 hours, so they don't pick up fridge odours. Can be made and refrigerated for up to 2 days before serving, but top with berries just before serving.
- To serve, top each lemon posset with some berries. To dress it up, add a fresh mint leaf and a dusting of icing/confectioners' sugar.

- Using a small saucepan, put the heavy cream and sugar over medium-high heat. Bring to a boil, and boil for 3 minutes, stirring constantly. If the boiling cream is bubbling too much, turn the heat down to medium, but maintain a boil. To prevent it from boiling over, lift the saucepan off burn for a few minutes, then return to the burner and continue stirring.
- Remove from heat and whisk in the lemon and lime juice. Pour the mixture into serving dishes. Cover and chill in the refrigerator for at least 4 hours or until set.
- When ready to serve, zest one lemon and one lime (1 teaspoon of each). Mix with the sugar. Sprinkle over the posset and garnish with whipped cream (optional).
