PUERTO RICAN LIME MERINGUE PIE

Received via email (thanks Myrtle Killian!). This sounds like it would be so tart & refreshing when the weather is hot & humid - coming soon so stashing for summer entertaining. Will try with the tiny little key limes when they are available. They are fiddly but oh so good!

Puerto Rican Lime Meringue Pie image

Steps:

  • Bake the pie crust in a preheated 350 degree F oven for about 30 minutes, or according to the package directions, until light golden brown. Cool and set aside.
  • Combine the cornstarch and 1 cup of the water in a saucepan and whisk until combined. Add the remaining water and filling ingredients and whisk to combine. Cook over low heat, stirring constantly with a wooden spoon, until thick and boiling. Pour into the baked pie shell.
  • Beat the egg whites until stiff. Add the remaining Meringue ingredients, beating until thoroughly combined. Top the pie filling with the egg white mixture, spreading it just to the edge of the pie crust. Bake in a preheated 350 degrees F oven for about 15 minutes, until light golden brown.
  • Cool fully in refrigerator before cutting.

9 inches pie crusts, your favorite recipe (or packaged if pressed)
3/4 cup cornstarch
4 egg yolks (reserve the white for the meringue)
2 1/2 cups water
1/4 cup lime juice, fresh
2 cups granulated sugar
1 teaspoon salt
4 tablespoons butter
4 egg whites
1/4 teaspoon baking powder
1 cup granulated sugar
1 tablespoon lime juice, fresh

LINDA'S SPAGHETTI PIE

I have made this many times and everyone loves it, especially the kids...Try it...You will love it too! Serving size really depends on how small or lg. you cut your wedges. Linda's Spaghetti Pie image

Steps:

  • 2 (9-inch) deep dish pie pans.
  • Preheat oven to 350.
  • Boil spaghetti according to pkg directions. Drain, and set aside.
  • Brown the meat, and IF you are using canned or jarred spaghetti sauce, add onion, Italian seasoning, and basil to the beef mixture.
  • If you are using your own homemade sauce, it will already have enough spices in it to your taste.
  • Add salt and pepper, to taste. Set aside.
  • Beat 2 eggs, and mix in with spaghetti.
  • Add Parmesan cheese, and mix well. Set aside.
  • Spray pie pans with non-stick cooking spray.
  • Layer each pie pan, making a well in the middle, with a thin layer of spaghetti on the bottom, and bringing spaghetti up the sides to make a pie crust.
  • You may, or may not have spaghetti left over, depending on how big your pie plates are. Set aside.
  • Beat 2 eggs, add Ricotta and parsley. Mix well.
  • Layer a layer of spaghetti, a layer of ricotta, a layer of meat, and a layer of sauce.
  • Cover with Mozzarella cheese.
  • Bake for 25-30 mins., or until cheese is bubbly, and all is nice and hot.
  • Serve with garlic bread or sticks, and a salad, and you have a delicious meal!

salt and pepper, to taste
4 eggs
1/2 cup parmesan cheese
16 ounces ricotta cheese
parsley
mozzarella cheese, to sprinkle on top of each pie

FLORIDA LIME PIE

Jane Nickerson was the food editor of The New York Times from 1942 until 1957, when she moved with her family to Lakeland, Fla. There, she eventually became food editor of The Ledger, in Lakeland, then owned by The Times. Her successor in New York was Craig Claiborne, whose star eclipsed hers for, among other things, systemic reasons we wrestle with still. But Ms. Nickerson was a hugely influential force in American home cooking, introducing ingredients and recipes from chefs and home cooks to a nation that met her first on a wartime footing and grew to find itself on a prosperous one. In Florida, she embraced local ingredients and foodways, and in 1973 published "Jane Nickerson's Florida Cookbook," an invaluable guide to the state's appetizing abundance. Her lime pie is a little richer than the more well-known Key lime pie. I like that about it.

Florida Lime Pie image

Steps:

  • Prepare the crust: In a large bowl, whisk together the flour and salt. Toss in the butter cubes serially, to keep them separate while coating them evenly in flour. Using a fork, cut the butter into the flour, continuing to toss them as you do, until they're roughly the size of peas.
  • Sprinkle 3 tablespoons ice water over the flour-and-butter mixture. Using your fork, toss to incorporate, then continue to add ice water, 1 tablespoon at a time, until the dough begins to come together as you stir it. Using your hands, fold the dough over itself a few times, adding just enough water so that it holds together.
  • Form the dough into a disk about 1-inch thick, and wrap tightly in plastic wrap, then refrigerate for at least 2 hours or up to a couple of days.
  • When you're ready to make the pie, first prepare the pie shell: Heat oven to 350 degrees. Roll out the pastry on a lightly floured surface until it is roughly 12 inches in diameter, then fit it into a 9-inch pie plate. Trim and crimp edges, then, using the tines of a fork, pierce the bottom crust 8 to 12 times. Line dough with a sheet of parchment paper, and spread evenly with pie weights. Place the pie crust on a baking sheet, and bake for about 30 minutes, or until the edges are set. You want it slightly underdone. Carefully remove the pie weights and parchment, and let cool completely on a rack. Reduce oven temperature to 325 degrees.
  • Make the filling: In a large bowl, use a whisk to beat the egg yolks until they are thick, then gradually beat in the condensed milk, then the lime juice. Stir in 1 tablespoon lime zest.
  • In a medium bowl, use a whisk to beat the egg whites until they form soft peaks, then fold them gently into the condensed-milk mixture. Pour into the cooled pie shell.
  • Place the pie back on the sheet pan and bake until the filling is just set in the center, about 20 minutes. It need not be completely firm because the filling thickens as it cools.
  • Cool the pie on a rack, then refrigerate until chilled, at least 2 hours. Serve topped with whipped cream and about 1 teaspoon grated lime zest.

1 1/4 cups/160 grams all-purpose flour, plus more for dusting

LINDA' PECAN PIE

I love pecan pie, but some time they are just too, sweet. So with a little tweaking over the years, I came up with my own version of Pecan Pie, Linda's style. Been serving it since 1974, with no complaints. Hope that you enjoy it.

Steps:

  • 1. In large mixing bowl combine 3/4 cup white karo syrup
  • 2. add 3/4 cup dark karo syrup in same mixing bowl
  • 3. add 3/4 cup C& H sugar
  • 4. add 3 slightly beaten eggs to the above wet mixture and stir until blended.
  • 5. After all the wet ingredients are stirred together poor into unbaked pie shell.
  • 6. * I have a Lard Pie shell recipe that I have posted, but if your in a hurry for time by a deep dish frozen pie shell. Make sure that you prick the bottom so that it does not get air pockets.
  • 7. Have oven pre-heated to 325 degrees. Have a warm cookie sheet (this avoid the pie from getting all humped up in the center.) You then place ingredients in the pie shell.
  • 8. After all wet mixtures are in pie shell. Carefully arrange halved pecans on top. Start from the outer perimeter and work towards center. Takes a little longer but a lot more professional looking pie.
  • 9. Cook pie at least 1 hour and 15 minutes, an undercooked pecan pie is runny in the center. This is not anything that I would serve. Check doneness of pie, by taking a butter knife and gently inserting in middle, when it comes out clean it is done. If not then continue cooking, until knife come out clean.
  • 10. Let pie rest before trying to serve, you may refrigerate it after it has cooled down. Some serve with whip cream or ice cream. Me the pie stand for itself and extra garnishes are not needed! Enjoy
