GARLIC ROAST PORK LOIN

Garlic Roast Pork Loin image

Steps:

  • Place rack in center of oven. Heat oven to 500 degrees. With the point of a paring knife, make 1/2-inch slits toward the center all around the roast. Insert the garlic in the slits, accompanied by a needle of rosemary, if using. Rub roast generously with salt and pepper. Place roast and bones, if available, in a roasting pan just large enough to hold them. Roast for 45 to 50 minutes, or until meat reaches an internal temperature of 140 degrees. The meat might still be slightly pink, but this is fine. Don't overcook the roast, or it will be dry and unappealing. Remove roast and bones to a platter. Let meat rest before slicing across. Snip off strings. Juices will collect better in a platter than on a cutting board.

2 1/2 to 3 1/2 pound boned and rolled pork loin (8 to 10 inches), bones kept if available
4 cloves garlic, smashed, peeled, and cut lengthwise into thin slivers
Few sprigs rosemary, optional
Kosher salt, to taste
Freshly ground black pepper, to taste
1/2 cup wine, for deglazing

Surf And Turf: Pork and Shrimp with Garlic (Cerdo y Gambas al Ajillo) image

Steps:

  • Preheat oven to 375 degrees F.
  • Rub the pork loin with salt, pepper, and garlic powder. In a large skillet with oven safe handles, heat the grapeseed oil over medium-high heat and sear the pork loin on all sides. Cover with foil and roast in the oven until fork tender, about 35 to 45 minutes to 1 hour. At the 30 minute mark, you will remove the foil and brush some of the mango honey sauce on the pork.
  • Bring 5 cups water to a boil in a saucepan with a lid. Add rice, butter and salt. Return to a boil, cover, reduce heat to low and let cook for 20 minutes without removing the lid.
  • After the pork loin has been placed in the oven, begin the mango honey sauce. In a saucepan, heat the grapeseed oil over medium-high heat and saute shallot until translucent, about 2 minutes.
  • Stir in jalapeno and vinegar and cook for about 1 minute. Add chicken stock and mango juice, bring to a boil. Allow to reduce by 2/3, about 10 minutes. Stir in the honey and allow to thicken, about 2 minutes. Reserve about 1/2 cup of the sauce in a small bowl, cover and keep warm by immersing in a larger container of hot water.
  • Uncover the pork and brush some of the mango glaze on the pork and allow to caramelize on the surface of the meat in the oven.
  • Remove the rice from the heat and let sit covered for a minutes. Heat the beans over medium heat and keep warm.
  • Remove pork from oven and let rest.
  • Fold the beans into the rice, cover and let rest.
  • For the shrimp, heat the grapeseed oil over medium heat in a skillet and add the butter to melt. Add the garlic and saute for a couple of minutes, being careful not to burn it. Add the shrimp and cook until just pink and opaque and remove from heat. (Do not overcook the shrimp.)
  • Slice down the pork. Spoon some rice and beans into the center of serving plate. Arrange slices of sliced pork on top and arrange approximately 4 shrimp around. Drizzle with reserved mango sauce.

Steps:

  • Cut loin into bite-sized strips.
  • Heat large pan with extra virgin olive oil to medium-hug heat.
  • Place loin in pan.
  • Add the garlic and sauté a little but not brown and add a bit of wine.
  • Add bay leaf and peppers.
  • Add more wine and a glass of water, should be covered, season with Beef Bouillon Cube.
  • Lower heat slightly when it starts to reduce.
  • Immediately afterwards return to medium heat and let braise further on its own juice from 7 to 10 minutes.
  • Taste if it needs more wine.
  • When the sauce has reduced, serve the loin with potatoes.

Steps:

  • Cut pork into 1cm slices and add to a glass bowl
  • Add minced garlic, olive oil, paprika, oregeno, salt and white wine to pork and mix through so all the pork is covered in marinade.
  • Refrigerate for 1 hour minimum. (Best over night)
  • To cook add olive oil to pan on a medium heat Fry until cooked through (around 10 minutes). Cooking in 2 batches might be necessary if using a smaller pan.

Grilled Pork Loin With Herbs, Cumin and Garlic image

Steps:

  • Butterfly the pork by slicing through it horizontally until you almost cut through, but leaving it attached on one side. Open the meat like a book. Depending upon the cut, it should be about 1 to 2 inches in thickness.
  • In a blender, purée all of the remaining ingredients, scraping down the sides of the bowl as needed to get a smooth paste. (Add a little water if needed to make the mixture move.) Spread herb paste all over the pork, making sure to cover it thoroughly and evenly. Place the meat in a large resealable plastic bag (folding it back together like a closed book if necessary to fit it in the bag) and let marinate in the refrigerator for at least 8 hours, or up to 48 hours.
  • Light the grill or heat to medium. Lay the pork out on the grill so it lies flat (like an open book). Cover grill and let cook until char marks appear on one side, 7 to 12 minutes. Use tongs and a large spatula to flip the meat. Continue to cook on the other side until the center of the meat registers 135 degrees on an instant-read thermometer for medium doneness, about 5 to 8 minutes longer. (The pork will continue to cook as it rests.)
  • Transfer meat to a cutting board, cover loosely with foil and let rest for at least 10 minutes before slicing.
  • Serve the pork slices garnished with red pepper flakes, lemon wedges, and basil and thyme leaves.

Pork With Clams (Lombo De Porco Com Ameijoas) image

  • Blitz the peppers with the garlic and salt, pour the oil in slowly and continue blending till all is a smooth paste.
  • Put pork in a non metallic bowl. Mix the garlic into the red pepper paste and add the wine,and coriander stir well then pour over the pork.
  • Marinate overnight in the fridge.
  • Remove the pork from the sauce with a slotted spoon, set the sauce to one side.
