LOW CARB KAHLUA LIQUEUR

This doesn't get syrupy, but it tastes just like the real thing, with hardly any calories. (Unless you add cream to it!)

Low Carb Kahlua Liqueur image

Steps:

  • Combine the water, splenda, vanilla and coffee in a saucepan and heat over medium heat, stirring occasionally until the splenda and coffee are dissolved.
  • Remove from the heat and add the vodka.
  • Cover and let cool.
  • Store in an empty bottle with a screw top/resealable lid.
  • Store in a cool dark place - best if stored about 30 days before drinking.

1 1/4 cups Splenda granular
1 1/2 tablespoons vanilla extract

Steps:

  • Combine first 4 ingredients in saucepan.
  • Cook until all dissolved.
  • Let boil a couple of minutes, leave a cover on pan/remove from heat and let sit at room temperature.
  • Add sweetener.
  • I store in refer.

2 cups water
2 tablespoons vanilla extract
2 tablespoons instant coffee powder
sugar substitute (10 packets)

I got this recipe years ago when I was doing the Atkins Diet, but lost it. I was overjoyed to find it again. It's quick and easy, and delicious!

Low Carb Kahlua image

Steps:

  • In a large pitcher or measuring cup combine water, sugar substitute, coffee crystals, and vanilla. Stir until all dry ingredients are completely dissolved.
  • Pour through funnel into a 1.5 - 2 liter bottle (I use an empty wine bottle; just be sure to save the cork, or use a screw-top bottle). Add the entire bottle of vodka. Cork, then shake well.
  • You can drink it immediately, but it gets better if you can stand to let the flavors marry overnight.

  • In a pot, bring coffee up to a slow simmer on medium low heat. Add the allulose sweetener and whisk it in until dissolved. Let it come back up to a slow simmer and then remove from the heat. This takes about 5 minutes.

  • Once cool, add the mixture to a jar or container to store it. Serve over ice for sipping or use as a cocktail mixer.
