EMILY'S PEACH CRISP (LOWER-FAT)

This delicious peach crisp is named after my daughter because my mom made it the day I brought her home from the hospital. It has fond memories for me and a great taste that we have repeated many times since.

Steps:

  • Preheat oven to 350.
  • Slice peaches into greased casserole; add other ingredients and stir.
  • Stir topping ingredients together and sprinkle over peaches.

Steps:

  • Preheat oven to 350 degrees F.
  • Combine all of the filling ingredients in a large bowl and gently mix.
  • Pour the filling ingredients into a 9 by13-inch baking pan and set aside while making the topping.
  • In a bowl combine the flour, sugar, baking powder, baking soda, cinnamon and nutmeg. Cut in the butter until the mixture resembles large peas. Stir in the egg. Distribute the topping evenly over the peaches in the baking pan. Bake for 40 minutes.

8 cups fresh sliced peaches (free stone peaches)
2 tablespoons fresh lemon juice
1/4 cup sugar
2 teaspoons flour

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C), and grease an 8 inch square baking dish.
  • Place the peaches in the bottom of the baking dish, and sprinkle them with almond extract.
  • In a bowl, combine the flour, sugar, brown sugar, cinnamon, and salt. Cut the butter into the flour mixture with a pastry cutter until the mixture resembles crumbs.
  • Sprinkle the flour mixture in an even layer over the top of the peaches, and bake in the preheated oven for about 45 minutes, until the peaches are bubbling and the topping is browned.

Steps:

  • Butter an 8" x 8" baking dish and sit aside for later. Peel your peaches. (The easiest way to peel them: less than one minute in boiling water and then a quick dip in ice water; the skins just slip off easily with your bare hands). Once they are peeled, cut them around the pit (quarters is easiest), and then cut the large pieces into slices. Once done, add in 2 tsp. of lemon juice and 1/4 cup brown sugar replacement and mix. Once mixed, pour into your buttered baking dish and set aside. Put your half cup of pecans in the food processor and pulse them until fine. If you don't have a processor, beat them with a rolling pin or chop them using a chef's knife. Take all remaining ingredients except the butter and combine. It's really easy in the processor , just a few quick pulses. Once this is done, take your stick of cold butter and cut it into cubes. Either cut the butter in with a pastry cutter or knives, or add it to your processor. Pulse or combine until crumbly and pea sized pieces are formed. Sprinkle the topping over your fruit trying to cover as much as possible. Place in a 350 degree oven and bake for about 40 - 45 minutes. The fruit should be nice and bubbly, and the topping slightly browned and crisp.

  • ( Take coconut cream out the can & put into a tight lid container. Place in refrigerator right away. The cream can be used right out of the can. However, I like to have it harden, that way it becomes more condensed & creamy. It is perfect because it starts to melt a bit as you place on the hot crisp!)
  • In a medium sized frying pan add in 1 tbsp coconut oil on medium heat. Then in medium sized bowl add in oats, pecans, cinnamon, salt, coconut & whisk together. Then pour on top the maple syrup & honey. Stir until evenly covered.
  • Then pour mixture in the frying pan & cook for about 7-10 minutes. You want it to get crispy, brown & toasted-- not burnt. So once you can start smelling it & the color is like above you are good to go. It will crisp more as it sits out too cool. (( THIS IS ONLY "LONG" step, so that is why I love to do this once & then you have the filling all week!))

  • Prepare the topping: In a medium saucepan, heat the butter and oil over medium heat, until the butter melts. Whisk in the brown sugar and granulated sugar until blended (The oil and butter will still be a little separate from the sugar, but the sugar should not have any lumps). Once combined, sprinkle in the oats, white whole wheat flour, cinnamon, and salt. Switch to a rubber spatula and fold to combine, stirring until the ingredients are evenly moistened. The mixture will be a little crumbly. Last, stir in the almonds.
