LOW FAT BEAN DIP

An easy, quick and tasty dip that is sure to please everyone. (It's low fat, meatless, low carb and sugar free!)

Steps:

  • Mix all ingredients in a microwave safe bowl.
  • Cook for 3 minutes.
  • Stir.
  • Cook about 3 minutes more until hot throughout.
  • Serve with chips.

4 ounces reduced-fat American cheese, cut into cubes
1/3 cup picante sauce
1 can fat-free refried beans
1/4 cup canned green chili, chopped & drained
1/4-1/2 teaspoon garlic powder
1/4-1/2 teaspoon dried cilantro

SKINNY SEVEN LAYER DIP

The traditional 7 layer dip can be rather fattening, so here is a fresher, lighter alternative. It requires a tad more work, but I assure you it is worth it! I always have people asking for this recipe.

Skinny Seven Layer Dip image

Steps:

  • Mix together the sour cream, garlic, jalapeno pepper, cilantro, taco seasoning, hot pepper sauce, and 1/2 of the lemon juice in a bowl until well blended.
  • In another bowl, mash the avocado with the remaining lemon juice; set aside.
  • Spread the shredded lettuce over a 12-inch serving platter.
  • Layer the black beans evenly on top, followed by the Mexican-style corn.
  • Spread the prepared sour cream mixture over the corn.
  • Gently spread the avocado mixture on top of the sour cream.
  • Pour the salsa evenly over the avocado mixture.
  • Sprinkle the Mexican cheese blend, olives, green onions, and tomato on top.

  • Sort beans and rinse in cold water. Add beans to a greased 3-qt. slow cooker. Add the next 10 ingredients; stir., Cook, covered, on high 2 hours. Reduce heat to low; cook until beans are tender, 6-7 hours. Serve with slotted spoon. If desired, top with fresh thyme sprigs. , Freeze option: Freeze cooled beans in freezer containers.
