- Adjust the oven racks to divide the oven in half. Preheat oven to 400°F Spray nonstick baking sheet with nonstick spray.
- On a sheet of wax paper, combine the flour, salt, and pepper. Place the breadcrumbs on another sheet of wax paper. Place the egg substitute in a shallow dish.
- Coat each double onion ring on both sides with flour mixture, shaking off the excess; dip the onion in the egg, then coat lightly with the bread crumbs. Arrange the rings on the baking sheet and spray the tops with nonstick spray.
- Bake on the top oven rack until browned, 10 minutes. Turn carefully and bake until browned, 5 minutes.

BAKED ONION RINGS
Steps:
- Preheat oven to 425 degrees F. Line two baking sheets with parchment paper. Lightly spray the parchment paper with olive oil cooking spray.
- Stir together the buttermilk and cornstarch in a shallow bowl.
- Stir together the flour, cornmeal, Parmesan cheese and House seasoning in a baking dish.
- Coat the onion slices by placing each slice into the buttermilk mixture allow excess to drip before coating in the seasoned cornmeal. Then place the coated rings in a single layer on the baking sheets. Repeat until all onion rings are coated. Give the onion rings a light spray with non-stick baking spray. Bake until golden brown, about 20-25 minutes flipping once halfway through and serve hot.
- Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.
OVEN FRIED ONION RINGS

Steps:
- Preheat the oven to 450 degrees F. Place parchment paper onto 2 baking sheets and set aside.
- In a small bowl, combine the flour, paprika and 2 teaspoons salt. In another bowl or shallow dish, whisk together the buttermilk and eggs. Add half of the flour mixture to the buttermilk and beat until smooth and thickened.
- In a separate bowl, combine the panko, olive oil and remaining 2 teaspoons salt.
- Lightly dredge the onion rings in the flour mixture and then drop into the buttermilk. Drain the excess batter and then dredge in the panko mixture.
- Arrange on the prepared baking sheets in a single layer. You can place smaller rings inside bigger rings if necessary, just make sure there is space between them. Then place in the oven. Cook until golden brown, 14 to 20 minutes. Halfway through the cooking time, flip over each onion ring to ensure even crisping and browning.
FRIED ONION RINGS
Steps:
- In a bowl, combine the buttermilk with the hot sauce and 2 teaspoons of Essence. Add the onion rings and press to coat. Marinate, covered, in the refrigerator for at least 1 hour.
- In a medium pot, heat the oil to 360 degrees F.
- In a shallow bowl or large dish, combine the flour with 2 tablespoons of the Essence. Dredge the onions in the seasoned flour, coating each ring evenly. Shake off any excess flour and carefully place the rings in the hot oil. Fry until golden brown, turning to cook evenly and prevent sticking, about 3 minutes per batch. Remove from the oil and drain on paper towels. Season the fried onion rings with Essence, and repeat with the remaining ingredients.
- Serve hot.
- Combine all ingredients thoroughly and store in an airtight jar or container.

LOW CARB DEEP-FRIED ONION RINGS
Steps:
- Place a heavy pot over medium-high heat with at least an inch of vegetable oil. Heat oil to 350 degrees F; it is important to monitor and maintain the temperature, or the soy flour breading and your oil will burn. (Portable deep fryers at home are great for this.)
- In a medium bowl, mix the eggs and cream to make an egg wash. In a separate larger bowl, mix the breading ingredients together.
- Peel and slice the onions in thick slices and carefully separate the rings. Then dip individual onion rings in the breading, then the egg wash, and then back in the breading again, making sure to coat well. Pat off any excess breading and carefully place into hot oil, in batches as necessary, and fry until golden brown and crisp, just 1 to 2 minutes. Remove and drain on paper towels. Serve immediately

I saw this is America's Test Kitchen today and they looked so delicious! They used Regular Lay's potato chips and saltine crackers for their breading, but they didn't say how much, I am guessing at least 1/2 cup of each.

Steps:
- Heat oven to 450°F When hot, oil two baking sheet with the oil and place into the oven to get hot, about 8 minutes.
- Cut off the ends of the onions and peel the outer layer off. Slice into 2 Inch thick slices. Remove the inside layers to created the rings.
- In a food processor, combine the potato chips and the saltine crackers and mix fine into crumbs. Lay them into a medium sized bowl.
- In another separate bowl, combine the buttermilk, egg, and salt, pepper, and cayenne and stir to combined.
- In a small bowl add the 1/4 cup of flour.
- Now to assemble the onion rings. Dip each ring into the flour first to get it dried. Dip them into the buttermilk mixture and then into the crumb mixture.
- Lay them onto a dish.
- Remove the baking sheets from the oven and place the rings on the hot pans, allowing enough room to fry. There should be 12 rings on each sheet.
- Place back in the oven and cook for about 8 minutes. Remove them from the oven and turn each ring to assure both sides get fried. Place back in the oven and continue cooking for about 8-10 minutes and golden brown.
- Allow to cool for a few minutes and enjoy!

Didn't want to mess with oil, etc. late on a Saturday evening, but wanted to use up those Vidalias so I found this on a very interesting website: www.cookingforengineers.com. It made great onion rings!

Steps:
- Process crackers and potato chips in a food processor.
- Whisk the buttermilk, 1/4 cup flour, cayenne pepper, egg, salt and pepper to form batter.
- Place the remaining flour, batter mixture, and saltine/potato chip crumbs in separate bowls.
- Preheat oven to 450°F.
- Take each onion ring and drop into the flour to create a dry surface for the batter to cling to. Tap off excess flour and drop ring into batter.
- Using a fork, lift the ring out of the batter and allow excess to drip off and then drop into saltine/chip crumbs. Press the coating onto the ring and then transfer to a plate.
- Pour 3 T. vegetable oil onto a half sheet pan and place into hot oven for 8 minutes.
- Remove pan and tilt to distribute oil. Place the onion rings on the pan making sure none touch.
- Put the pan back in the oven for 8 minutes. Flip rings over and bake another 8 minutes.
- Remove from oven, salt & enjoy.
