LOWER FAT DOUBLE CHOCOLATE CHIP COOKIES (WW)
I needed to make some cookies that wouldn't interfere with my trying to cut back on my fat intake. A friend passed on this recipe which she said was from Weight Watchers. If you make 40 cookies, it is 1 point each (I'm not sure what the Points Plus Value is). And yes, they are small cookies, but very fudgy and delicious!

Steps:
- Preheat oven to 350°F.
- Combine flour, baking soda and salt in a large bowl. (Do not pack flour when measuring).
- Beat butter and brown sugar with a mixer at medium speed until light and fluffy; gradually add granulated sugar, beating well. Add cocoa and egg whites, beating well. Gradually beat in flour mixture until blended. Stir in chocolate mini chips.
- Drop by rounded teaspoonfuls (about 3/4-inch balls to get 40 cookies) onto baking sheets coated with cooking spray. Bake at 350°F for 10 minutes. Cool on pans 2 minutes or until firm. Remove cookies from pans; cool completely on wire racks.

LOW-FAT DOUBLE CHOCOLATE CHIP COOKIES
These came from a Pillsbury healthy baking cookbook. They make a small batch, so double if you're serving them to more than a couple of people. Also, the dough can get a little dry near the end sometimes. Adding a little bit of milk or chocolate liqueur will help loosen it up nicely.

- In large bowl, combine brown sugar and margarine until light and fluffy.
- Add vanilla and egg white; blend well.
- Add dry ingredients; mix well.

- Bake for 8-9 minutes. Cool 1 minute before removing from cookie sheet.

- In a large bowl, combine the applesauce, oil and egg whites. Beat in sugars and vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to applesauce mixture and mix well. These were advertised as the best tasting low fat chocolate chip cookies ever. Certainly caught my eye. While these are not really lowfat for me, the are certainly lower than your usually cookie.

- Preheat oven to 350 degrees Fahrenheit.
- Cream the butter and both sugars in a large bowl. Beat with electric mixer until smooth. Add the egg, egg whites, salt and the vanilla. Beat well.
- In a smaller bowl, combine the dry ingredients (flour, ground oatmeal and baking soda). Slowly add the dry items into the larger bowl and beat with electric mixer until batter is smooth and creamy. Fold in entire bag of chocolate chips, and if you like add the walnuts.
- Drop dough by large teaspoons (or scant Tablespoons) onto cookie sheet and bake for 11 minutes (the time REALLY depends on your oven so watch that first batch!).

- Preheat oven to 350°F degrees.
- Whisk dry ingredients, set aside.
- Combine wet ingredients with a hand mixer on low.
- To cream, increase speed to high and beat until fluffy and the color lightens.
- Stir the flour mixture into the creamed mixture until no flour is visible.
- (Over mixing developes the gluten, making a tough cookie).
- Now, stir in the semi-sweet and milk chocolate chips.
- Use a cookie scoop (2 tbs per scoop) to measure and drop dough 2" apart onto an ungreased baking sheet.
- Bake on center rack of oven 12-14 minutes, until lightly browned and edges are set.
- Remove from oven; leave cookies on baking sheet for 2 minutes to firm up.
- Transfer to a wire rack to cool.
- If you are reusing the warm baking sheet, reduce baking time slightly.

- Preheat oven to 375 degrees.
- In a large bowl, beat butter and sugars together with an electric mixer until creamy. Add egg white and vanilla and mix until well blended.
- In a medium bowl, combine flour, baking soda, salt and cocoa powder.
- Gradually add flour mixture to egg and sugar. Use a wooden spoon to work the dough together. Don't worry if the dough seems a little crumbly at first. Stir in chocolate chips.
- Drop cookie dough by the teaspoonful on to a cookie sheet lined with parchment paper or a silicone mat if you have one.
- Bake for 8-10 minutes. Cool on cookie sheet for 1 minute, then transfer to wire rack to cool completely.
