CAN'T TELL THEY'RE LOW-FAT BROWNIES
This was my attempt to make my mom's brownie recipe lower in fat. My family loves them!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch square pan.
- In a medium bowl, stir together flour, cocoa, sugar, and salt. Pour in oil, vanilla, prunes, and eggs. Mix until everything is well blended. Spread the batter evenly into the prepared pan.
- Bake for 30 minutes in the preheated oven, or until top is shiny and a toothpick inserted into the center comes out clean.

- 1. PREHEAT the oven to 350°F. Grease a 13" x 9" baking pan. 2. COMBINE the flour, cocoa powder, baking powder, and salt in a medium bowl. 3. BEAT the egg whites until foamy in a large bowl with an electric mixer on low speed. Gently stir in the eggs, granulated sugar, and brown sugar until well-combined. Blend in the applesauce and vanilla extract. Stir in the flour mixture. Stir in the walnuts. 4. SPREAD into the prepared pan. Bake for 30 minutes, or until a wooden pick inserted in the center comes out clean. Do not over bake. Cool in the pan on a rack. Dust the confectioners' sugar over the brownies. Steps:
- Position the rack in lower third of the oven and preheat to 350°F Spray the pan with vegetable oil spray.
- Stir together flour, cocoa, salt, and baking powder with a whisk.
- Melt butter in medium saucepan. Off the heat, stir in the sugar until combined (texture will remain sandy). Add the egg, egg whites, vanilla, and dissolved espresso powder. Beat with a wooden spoon about 40 strokes, scraped side of pan as necessary.
- Add the dry ingredients and beat for another 40 strokes, or until completely mixed. Scrape mixture into prepared pan. Spread evenly.
- Bake 20 to 25 minutes or until a toothpick inserted into the center comes out a little gooey. Cool on a rack. Cut into 16 squares.

Steps:
- Preheat oven to 350°F.
- Spray an 8 inch square baking dish with nonstick cooking spray.
- Dust with cocoa, shaking out excess.
- In a small saucepan, melt margarine on low heat.
- Remove from heat and stir in cocoa, sugar, egg, applesauce and vanilla, beating until smooth.
- Gently stir in flour, baking soda and salt until well combined.
- Pour into prepared pan and bake 25 to 30 minutes or until set.
- Cool completely and cut in 16 squares with hot wet knife.
- Store in the refrigerator.

LOW-FAT FUDGE BROWNIES
After finding the recipes for low fat brownies on the Zaar lacking, I decided to create my own recipe. Here is what I've come up with, much lower in fat and still delicious. I've put the molasses as optional, because I've made it with out, but I think it really enhances the flavor. You may stir in 1/2 cup chopped nuts after the last step, but that will add more fat to the recipe. And, you may use two squares unsweetened baking chocolate instead of the cocoa, oil, and extra tablespoon of applesauce

- Preheat oven to 350.
- Lightly spray an 8x8x2-inch baking pan with non-stick cooking spray.
- Beat applesauce, oil, molasses and cocoa OR melted unsweetened baking chocolate (if using baking chocolate, omit cocoa, oil, and extra tablespoon of applesauce) in a large bowl.
- Beat in sugar.
- Add egg whites and vanilla and stir until just combined.
- Stir in flour and nuts (optional). If the batter appears too runny, stir in an additional 1/4 cup flour.
- Spread batter in pan.
- Bake at 350 for 30 minutes.
- Coll and cut into bars.
