Make-Ahead Berry Oatmeal Cups Recipe by Tasty image

Steps:

  • Preheat oven to 350°F (180°C)
  • In a bowl, whisk all wet ingredients until fully combined.
  • Add the dry ingredients and mix thoroughly.
  • Divide mixture amongst the lined cups of a muffin tin. Top each muffin with berries.
  • Bake 25 minutes. Store covered up to 2 days.
  • Enjoy!

Steps:

  • Spray 6 muffin cups with cooking spray.
  • Whisk banana, honey, and almond extract together in a bowl until smooth. Whisk oats, cinnamon, and salt together in another bowl. Stir oat mixture into banana mixture until evenly mixed. Press mixture into the base and up the sides of the prepared muffin cups. Refrigerate until chilled and firm, 1 to 2 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove muffin cups from refrigerator and press each firmly into the base and sides of the muffin cups again.
  • Bake in the preheated oven until set and fragrant, 10 to 12 minutes. Press sides of granola cup into the muffin cup again with a spoon. Let cool for 20 minutes before removing from muffin cups. Fill each cooled cup with yogurt.

Make-Ahead Granola-Oat Cups image

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 12 regular-size muffin cups.
  • In medium bowl, mix crushed granola bars, oats, almonds, baking powder and cinnamon. In another medium bowl, beat milk, eggs, maple syrup and vanilla with whisk. Add to oat mixture, and stir to combine.
  • Fill muffin cups three-fourths full; top with berries.
  • Bake about 25 minutes or until set. Cool slightly before eating.
  • If desired, freeze any extras on a sheet pan until solid. Once frozen, seal in freezer bag, and store in freezer. Reheat in microwave in 30-second to 1-minute increments until warmed through.

  • Preheat oven to 350 degrees F (175 degrees C). Line two rimmed baking sheets with parchment paper.
  • Combine all ingredients in a large bowl. Use your hands or a wooden spoon to thoroughly mix, until oats and nuts are well coated. Spread mixture onto prepared baking sheets in an even layer.
  • Bake until golden brown, about 40 minutes. Stir granola and rotate pans 20 minutes into baking time so that it browns evenly.
  • Cool completely, then transfer to lidded containers or jars. Store at room temperature for up to two weeks. Serve with milk, yogurt, or your choice of fruit (I like berries, peaches, mango or pineapple).
