AMAZINGLY EASY BANANA CAKE
One day I had 3 overripe bananas, no flour, no eggs, and four kids I did not want to take shopping. I made this up on the fly and now I make it all the time.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking dish.
- Beat bananas, cream cheese, and oil together in a bowl using an electric mixer on medium speed until smooth and creamy, about 2 minutes. Add cake mix and continue beating for 3 minutes more; spread into the prepared baking dish.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 30 to 35 minutes.

Found this recipe in a very old church cook book. It's the favorite of my grandchildren. I bake it often. It's very easy. I usually frost it with a sour cream frosting, but if this is too sweet for your taste a thin butter icing would work well. A very light cake.

- Stir baking soda into mix before adding liquid.
- Add water, eggs and mashed bananas.
- Mix at medium speed until blended, then on high for two minutes.
- Fold in nuts if desired.
- Pour into 9 x 13 greased cake pan.
- Bake at 350 deg. for 34 - 38 minutes.

I found this recipe on Duncan Hines website. One morning I decide to take my bananas to work with me to use in a cooking project for my 4 and 5 years old. I was in a hurry so I look on the website and found this recipe. This is one of the best banana cake I ever had.
