Steps:
- Preheat the oven to 400 degrees F.
- Line a 9-inch square baking sheet with foil, allowing the foil to extend over the sides. Spray with nonstick cooking spray.
- Mix the oats, cranberries, almonds, cinnamon and salt in a medium bowl.
- Combine the butter, sugar and honey in a medium saucepan over medium heat, stirring until the butter melts and the mixture begins to boil. Add the vanilla and stir. Remove from the heat.
- Pour the butter over the oats, mixing until well coated. Transfer to the prepared pan and, using a spatula, press the oats evenly into the pan.
- Bake until the top is crisp and golden brown, 15 to 20 minutes. Transfer to a rack and cool. Using the foil as aid, lift out of the pan and place on a work surface. Crumble into pieces. Serve with berries, plain yogurt and drizzle with additional honey.
HOMEMADE GRANOLA
Homemade granola with that toasted, baked deliciousness-it's just so perfect and comforting. I make mine all in the one saucepan, then keep a batch in an airtight container. It's great with plant-based milk or a dollop of coconut yogurt. At the moment my go-to is a heaped spoon of chia pudding, the granola, a spoonful of my lime coconut yogurt and a sprinkle of minted berries. Happiness in a bowl. Feel free to experiment by swapping out the raw nuts, seeds and dried fruit for what you have available.

Steps:
- Preheat your oven to 325 degrees F (160 degrees C).
- Line a large sheet pan or two smaller ones with parchment paper.
- Take a medium-large saucepan and on a medium heat, add the maple syrup and olive oil. Heat through, stirring to combine.
- Add the oats, nuts, seeds and cinnamon to the syrup mixture and stir well with a wooden spoon to coat all of the dry ingredients.
- Evenly spread the granola out onto the prepared sheet pan and place in the oven to bake for 30 minutes, checking and stirring around every 10 minutes to allow all the mix to toast evenly.
- Once golden and roasted, take the granola out. While it is still warm, stir in the dried cranberries and raisins and toss together. The mixture will crisp up more as it cools.
- Once cool, store in an airtight container.

GRANDMA'S HOMEMADE GRANOLA
My grandmother and I created this homemade granola recipe one day, and it is currently loved and requested by the rest of my family, including my other grandma who used to be anti-granola! My favorite ways to serve it are in coconut Greek yogurt or just in a bowl with milk. Simple and awesome.

MEGAN'S GRANOLA
My daughter and I came up with this recipe and it is absolutely wonderful. Several of my children who typically don't care for granola, loved it. I've tried many granola recipes and this tops them all. Enjoy!

MAMA'S GRANOLA
I've tweaked this old church recipe over the years. Hearty and can be used as cold or hot cereal. To make flavored oatmeal add a 1/2 cup of water per 1/2 cup of granola and microwave. We eat this by the handful. Put some in a mason jar and add a ribbon-makes a great new neighbor gift. It never lasts long. I've also used it as...

Steps:
- 1. Melt butter -add brown sugar and vanilla. Stir.
- 2. Combine oats, coconut and nuts in large baking pan. (I always double my batches so I use my large roasting pan.)
- 3. Pour and mix the butter mixture into the oats. Mix until there are no dry spots on the oats. Bake at 300 degrees for 45 mins, stirring every 15 mins.
- 4. Baked granola should have some golden spots but not be so dry that it won't clump. Remove from oven and mix in dried fruits. Immediately put warm granola into mason jars or large jar for storage. Allow to cool without lid. When cool you can break up. Should be moist and crunchy. Store in airtight container.
