OVEN FRIED CHICKEN II

I love fried chicken, but it takes so long and is such a big mess. I came up with this one, and have been making it ever since! Everyone I have given the recipe to has loved it as well.

Oven Fried Chicken II image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place flour in a shallow plate or bowl and season with salt and pepper to taste. Put the bread crumbs in another shallow plate or bowl and beat the eggs in another bowl.
  • Dredge the chicken piece by piece in the flour, then the egg, then the bread crumbs, until all pieces are coated. Pour the oil into a 9x13 inch baking dish. Add the chicken to the dish and sprinkle with paprika to taste. Bake in the preheated oven for 30 minutes, then turn pieces over and bake for another 30 minutes. Remove from oven and drain on paper towels. Enjoy!

Steps:

  • Heat oven to 425. In oven, melt shortening and margarine in a 13x9x2 baking pan. Mix flour, salt, paprika and pepper. Coat chicken pieces well with flour mixture. Place chicken skin side down in melted shortening. Cook uncovered for 30 minutes. Turn chicken and cook 30 minutes longer or until fork tender.

  • For Big Mama's Rub:
  • Place all ingredients into a resealable container and mix until thoroughly combined.
  • For the oven fried chicken:
  • Preheat oven to 350 degrees F.
  • Cover each piece of chicken in buttermilk, then lemon-pepper, no-salt seasoning and Big Mama's Rub, to taste. Place in a bowl, cover with plastic wrap and place into the refrigerator overnight so that the meat can absorb some of the liquid.
  • Remove the chicken from the refrigerator and dredge in self-rising flour.
  • Fry the chicken in a 1/2-inch of canola oil in the bottom of a roasting pan in the preheated oven. Fry the chicken for 15 minutes per side.

Steps:

  • Wash chicken pieces and sprinkle with salt and pepper, to taste. Marinate pieces for 1 hour in buttermilk. Remove chicken pieces 1 at a time from buttermilk, coat with flour, and deep-fry until golden brown.

Steps:

  • Sprinkle chicken with salt and pepper.
  • Place chicken in shallow dish or ziploc plastic bag; add buttermilk.
  • Cover or seal, and chill at least 2 hours.
  • Remove chicken from buttermilk, discarding buttermilk.
  • Dredge chicken in flour.
  • Pour oil to a depth of 1 1/2 inches in a deep skillet or Dutch oven; heat to 360°F.
  • Add chicken, a few pieces at a time; cover and cook 6 minutes.
  • Uncover chicken and cook 9 minutes.
  • Turn chicken; cover and cook 6 minutes.
  • Uncover and cook 5 to 9 minutes, turning the chicken the last 3 minutes for even browning, if necessary.
  • Drain on paper towels.
  • Test chicken with meat thermometer (170°F) or by piercing thickest portion with fork.
  • When juices run clear it is done.
