MARVELOUS MARBLE CAKE

- In top of a double boiler or a metal bowl over barely simmering water, melt chocolate and 3 tablespoons butter; stir until smooth. Cool to room temperature., Preheat oven to 375°. Line bottoms of three greased 8-in. round baking pans with parchment; grease parchment., In a large bowl, cream remaining butter and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Beat in vanilla. Whisk flour, baking powder and salt; add to creamed mixture alternately with sour cream, beating well after each addition., Remove 2 cups batter to a small bowl; stir in cooled chocolate mixture and, if desired, chocolate chips, until blended. Drop plain and chocolate batters by tablespoonfuls into prepared pans, dividing batters evenly among pans. To make batter level in pans, bang cake pans several times on counter., Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Cool in pans 10 minutes before removing to wire racks; remove parchment. Cool completely., For frosting, in a large bowl, beat butter until smooth. Gradually beat in confectioners' sugar, vanilla and enough milk to reach desired consistency., If cake layers have rounded tops, trim with a serrated knife to make level. In a microwave, melt chocolate chips; stir until smooth. Cool slightly., Place 1 cake layer on a serving plate; spread with 1/2 cup frosting. Repeat layers. Top with remaining cake layer. Frost top and sides of cake., Drop cooled chocolate by 1/2 teaspoonfuls over frosting. Using a large offset spatula, smear chocolate to create a marble design in frosting.

IRISH MINT CREAM MARBLE POUND CAKE
I created this cake as a reminder of when my husband & I first started dating, many years ago, because I always was working on St Patrick's Day, I would always bring home a Chocolate Mint layer cake for Dessert on the big day. So I knew in my mind what I wanted to do, it had to have mint, & it had to have chocolate but not too...

- 1. NOTE: THIS IS A LARGE CAKE, YOU MAY WANT TO USE 2 CAKE PANS. PREHEAT OVEN TO 325 DEGREES F. THIS IS THE PAN I USED, it has a 30 cup capacity. Also note because I didn't know exactly how much frosting I needed, I used 2 cans, and had a lot left over. You may want to cut frosting ingredients in half.DO NOT OPEN DOOR DURING FIRST HOUR & 15 MINUTES OF BAKING TIME.
- 2. Cream Butter and sour cream together till creamy. Add sugar gradually & beat until no granules are visible in the butter mixture. About 6-8 minutes.
- 3. Add eggs one at a time beating well after each addition.
- 4. Combine pistachio pudding with the flour & stir to blend together. Gradually add flour mixture to the creamed mixture,
- 5. Add the mint liqueur to a large measuring cup but also add in the peppermint extract and vanilla bean paste. Then alternate the liquid mixture with the dry beating well after each addition. Add optional green food color until desired shade of green is reached, then blend thoroughly.
- 6. Remove about 3 1/2 cups of batter to a smaller bowl,Mix cocoa and chocolate syrup to a very small bowl and stir until it is fully blended, then pour into the bowl with the lesser amount of batter, stirring well until blended and batter is very chocolate colored.
- 7. Spray baking pan with Bakers Joy or non stick cooking spray, thoroughly. Adding a layer of the green batter to bottom of pan first, then add about half of chocolate batter, then more green batter, the remaining chocolate batter, and lastly add the remainder of the green cake batter. Smooth out the top of the cake, and lightly run a knife through cake batter being careful not to scrape the sides of the pan nor the bottom.
- 8. Place in preheated 325 degrees F. and cook for about 1 hour and 30 to 40 minutes or until a toothpick inserted in center comes out clean. Remove from oven.
- 9. ALLOW TO SIT IN PAN AT LEAST 10 MINUTES before inverting cake on to platter or cooling rack to cool completely.
- 10. Prepare frosting by combining the cream cheese with the canned frosting, add the peppermint extract, stir to blend, then frost cake as desired.
- 11. Combine the syrup and cocoa powder together in a small bowl, then stir till completely blended, then carefully drizzle glaze along the edge of the cake allowing it to drizzle down the sides of the cake.
- 12. Decorate cake as desired with M& M's or candies of your choice.
- 13. SLICE-SERVE & ENJOY!

MINT CHOCOLATE-CHIP CAKE
Mint-chocolate-chip devotees will relish this dessert: The ice cream serves as both filling and frosting; the sole diversion is the chocolate cake. You may alternate layers of green and white ice cream as we did in this striped cake, but using simply one or the other is just as delicious.

- Trim cake layers to 6-inch squares. Slice each layer in half horizontally, making a total of 4 layers. Cut a 6-inch square of cardboard or foam; set aside.
- Microwave green ice cream until softened, about 20 seconds. Transfer ice cream to a medium mixing bowl, and stir with a rubber spatula. Place in the freezer. Microwave white ice cream until softened, about 20 seconds, and transfer to another mixing bowl. Stir with a rubber spatula.
- Place one cake layer on the cardboard. Using an offset spatula, spread 2 cups white ice cream over the cake. Place another cake layer on top of ice cream. Place cake and bowl of white ice cream in the freezer for 20 minutes.
- Remove the cake and the bowl of green ice cream from the freezer. Stir ice cream with the spatula to soften. With the spatula, evenly spread 2 cups green ice cream over cake. Place a third cake layer on top. Return the cake and the bowl of green ice cream to the freezer for 20 minutes more.
- Remove the cake and the bowl of white ice cream from the freezer, and spread the remaining 2 cups white ice cream over the top; place the fourth cake layer on top of the white ice cream. Return the cake to the freezer for 20 minutes more.
- Remove the cake and bowl of green ice cream from freezer, and spread 2 cups green ice cream over top. Return cake and ice cream to freezer, and chill the cake until firm, about 1 hour.
- Remove the cake and remaining 2 cups green ice cream from freezer. Using a long serrated knife, trim 1/4 inch from all sides of the cake, making them even. Using an icing spatula, quickly spread the remaining green ice cream around the sides of the cake. Return the cake to freezer; freeze until completely hardened.
NANA'S CHOCOLATE MINT MARBLE CAKE
Chocolate and peppermint flavours are added and then swirled together to give a marbled effect. This was my grandmother's recipe so it is ancient!

- Grease and flour an 8" cake tin, set oven at 200degC (400degF).
- Sift flour and salt, divide into halves.
- Cream butter and sugar until light; add eggs separately, beating well, divide.
- To one bowl add flour, cocoa mixture and fold gently.
- Fold remaining flour and peppermint essence into other bowl.
- Spoon half white mixture into prepared tin, top with chocolate mixture and then remaining white, smooth top and run knife through in a figure eight.
- Bake 50 minutes.
- Icing; Melt chopped chocolate over pan of hot water(or very low in microwave), add cold water, butter and icing sugar and stir until smooth and glossy - use immediately.
