CLASSIC MARGARITA WITH ESPELETTE SALT

Classic Margarita with Espelette Salt image

Steps:

  • Combine the salt, pepper and sugar on a plate. Lightly dip the rims of 4 rocks glasses into a small amount of lime juice, then into the salt mixture to crust the edges of the glasses.
  • Combine the tequila, lime juice, orange liqueur and agave syrup in a large pitcher with ice. Stir vigorously to combine. Pour over ice in the salt-rimmed glasses, garnish with a slice of lime and serve immediately.

1/4 cup coarse salt
1 teaspoon espelette pepper or chile powder
1 teaspoon sugar
2 cups fresh lime juice, plus more for rimming glasses
3 cups tequila
1 1/2 cups orange liqueur
1/2 cup agave syrup
Lime slices, for garnish

THE PERFECT MARGARITA

Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

The Perfect Margarita image

Steps:

  • Moisten the rim of a glass with a lime wedge. Sprinkle salt onto a plate. Lightly dip the moistened rim into the salt. Place a large ice cube in the glass and freeze the prepared glass until ready to serve.
  • Fill a cocktail shaker with fresh ice. Add tequila, triple sec, and lime juice. Cover and shake vigorously until outside of the shaker has frosted. Strain into the prepared glass and garnish with a slice of lime.

  • Preheat the oven to 300 degrees F. Combine the lime zest and orange zest on a baking sheet. Bake for 5 minutes. Stir the zest and continue to bake until it is dry to the touch, about 5 minutes move. Remove the baking sheet from the oven and allow the zest to cool completely, about 20 minutes. In a medium bowl, combine the salt and sugar. Add the zests and stir until evenly distributed. Divide the salt mixture between 2 (4 ounce) jars with tight fitting lids. Store in a cool, dry place for up to 6 months.
