THE PERFECT MARGARITA
Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

- Moisten the rim of a glass with a lime wedge. Sprinkle salt onto a plate. Lightly dip the moistened rim into the salt. Place a large ice cube in the glass and freeze the prepared glass until ready to serve.
- Fill a cocktail shaker with fresh ice. Add tequila, triple sec, and lime juice. Cover and shake vigorously until outside of the shaker has frosted. Strain into the prepared glass and garnish with a slice of lime.

- Rub the rim of 4 rocks glasses with lime; dip in coarse salt. Fill three-quarters of the way with ice. Combine 1 cup tequila, 2/3 cup fresh lime juice, 1/3 cup orange-flavored liqueur and 2 teaspoons superfine sugar in a cocktail shaker. Shake well, then pour into the glasses. Garnish with lime.

MARGARITA TIRAMISU
Very elegant looking dessert for a Mexican theme party. You'll get rave reviews for this recipe. This needs to chill overnight.

- Whisk 1 1/3 cups sugar, 1/2 cup water, 3 tablespoons tequila, 3 tablespoons orange liqueur, yolks and 1/2 teaspoon lime zest in large metal bowl.
- Set bowl over 2-quart saucepan of simmering water (do not allow bottom of bowl to touch water). Whisk constantly until mixture thickens and candy thermometer inserted into mixture registers 140°, about 5 minutes total. Remove bowl from over water.
- Whisk cream cheese, 1 package at a time, into warm custard until blended.
- Using electric mixer, beat whipping cream, lime juice, 1 tablespoon tequila and 1 tablespoon orange liqueur in large bowl until cream holds peaks. Fold in cream cheese mixture.
- Place 2 tablespoons sugar on a large plate. Rub the edges of a 14-cup trifle dish with water, or cut lime. Invert the trifle dish on the plate of sugar so that the top is covered with sugar. Turn upright.
- Place margarita mix in a shallow dish. Submerge 1 ladyfinger in margarita mix, turning to coat twice; shake excess liquid back into the dish. Place dipped ladyfinger facing out, around bottom side of the trifle dish, pressing against the side of dish (ladyfinger may break). Repeat with enough ladyfingers to go around bottom side of dish once. Dip more ladyfingers and arrange over bottom of dish to cover.
- Spoon 2 cups cream cheese mixture over ladyfingers; spread to cover. Sprinkle zest from 1 lime over cream cheese mixture. Repeat with more cookies dipped in margarita mix, cream cheese mixture, and lime zest in 2 more layers.
- Cover and chill overnight. Before serving, garnish with lime slices.

EASY FROZEN MARGARITAS
Authentic margaritas call for lots of fresh lime juice - both expensive and time-consuming. I've found I can shortcut the process by using frozen limeade. And for a festive non-alcoholic drink, combine a 12-ounce can of limeade (thawed) with a 48-ounce bottle of sparkling water.

- Working in 2 batches, place 1 quart ice cubes in a blender. Add 1/2 can limeade, 6 ounces tequila and 2 tablespoons Cointreau. Blend at highest speed until drink is almost smooth. Pour into a pitcher and repeat with remaining ingredients. Store in the freezer.

- In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand until soft-set, 2 minutes. In a small bowl, beat cream until it begins to thicken. Add confectioners' sugar; beat until soft peaks form. Fold into pudding; cover and refrigerate., Arrange half of the ladyfingers cut side up in an 11x7-in. dish. - (Optional step) -- If you would like to make the rim of each glass to look like a margarita's, place 2-3 drops of green food coloring into a gallon ziploc bag. Zip and smash to distribute the coloring. Spoon about 1/4 cup granulated, zip the bag, and mix the sugar and food coloring together until homogeneous. Place into a small bowl and let dry for at least 5-10 minutes.
- Meanwhile, combine the lime juice with tequila in a medium bowl. If you would like to place colored sugar around the rim of the glasses, invert glasses onto the lime juice/tequila mixture and then, onto the bowl with the colored sugar. Set aside.
- Then, wet (not soak) the ladyfingers into the lime juice/tequila mixture one by one on both sides. Distribute them into 3 glasses (If necessary, cut a piece of each cookie with a serrate knife before wettening them in order to fit the glass).
- In a large bowl, whisk the the mascarpone cheese with sugar and coconut milk until obtaining a creamy mixture. Stir in the coconut flakes and fold the whipped cream gently until obtaining a homogeneous, creamy mixture. Spoon or pipe into the glasses.
