- Combine first 10 ingredients in a food processor; pulse until blended. Remove to a small bowl; refrigerate, covered, until serving., Cook tortellini according to package directions. Drain; rinse with cold water and drain again. Toss with oil. Thread tortellini and shrimp onto toothpicks. Serve with sauce.

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini. Cook uncovered, stirring occasionally, until the tortellini float to the top, 5 to 6 minutes. Drain and rinse with cold water.
- Place tortellini, cherry tomatoes, and pesto in a large bowl; toss until evenly coated.
- Skewer one tortellini and one tomato on each toothpick. Arrange on a tray. Keep refrigerated until serving.

- Mix together the olive oil, pesto and vinegar in a bowl.
- On small skewers, thread 1 tortellini, 1 cherry tomato and 1 mozzarella cube per skewer. Lay the skewers on a platter and lightly drizzle the dressing over them with a spoon.
- Serve immediately or refrigerate. Sprinkle on the minced parsley just before serving.

- Bring a pot of salted water to a boil. Cook the tortellini according to package directions. Drain the tortellini and add to a mixing bowl. Add 1 tablespoon of olive oil, Parmesan and 1/4 teaspoon pepper. Toss to combine and set aside.
- Add the mozzarella balls, cherry tomatoes, 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper to a small bowl. Mix to combine and set aside.
- To assemble the skewers, thread one of each onto a skewer: tortellini, mozzarella ball, cherry tomato, olive and peppadew pepper. And then add a piece of soppressata folded into a size approximately as big as the other ingredients, then a half piece of mortadella also folded to match the size of the other ingredients and finally with a folded basil leaf. Make more skewers using the remaining ingredients. Serve immediately or cover and refrigerate until ready to serve.

- In a medium bowl, combine the fennel seeds, orange zest, juice and pepper.
- Gently stir in the feta and marinate for 1 hour at room temp or up to 3 hours in the fridge.
- To make skewers, place a mint leaf about 3/4-inch up the skewer, then add a chunk of cucumber, and an olive half.
- Gently place a cube of the marinated feta on the end.
- These can be made several hours in advance and stored in the refrigerator until ready to serve. Allow to come to room temp before serving.

TORTELLINI SALAD WITH FRESH BASIL AND TOMATOES IN VINAIGRETTE
I took an idea from Michael Chiarello on the Food Network, and tweaked it according to a favorite vinaigrette recipe of mine. This is a delightful main-dish salad on a hot summer night. Grill up some foccacia, brushed with a good olive oil like Frantoia or Ravida, and serve it in pie-shaped wedges alongside. Good eats!

- For the Vinaigrette: Whir first five ingredients in blender until smooth. Drizzle thin stream of olive oil in until all is emulsified. Set aside.
- Boil tortellini according to directions, drain, rinse in cold water to stop the cooking. Spread cooked pasta out on a jelly roll pan, drizzle with the good olive oil and sprinkle with pepper; stir up to coat tortellini with oil. This prevents the pasta from going glue-y when added to the rest of the salad ingredients. Set aside, covered with plastic wrap, at room temperature for up to a couple hours.
- In a very large bowl, place quartered tomatoes, feta cheese crumbles, scallions, and pour about half the vinaigrette over, tossing gently. Refrigerate the tomato mixture until 2-3 hours before serving.
- About 2-3 hours before serving, toss the oiled tortellini with the tomato mixture, add a bit more dressing, if you think it needs it. Refrigerate. Just before serving, toss the fresh basil with the tortellini-tomato mixture. Serve.
