AMERICAN-STYLE CREAMY GREEK DRESSING
This is a dressing I made for an American-style Greek salad, one with a hearty lettuce not typically found in a traditional Greek salad.

Steps:
- Process cucumber, feta cheese, mayonnaise, sour cream, milk, olive oil, garlic powder, salt, onion powder, and black pepper in a food processor until smooth.

CREAMY GREEK SALAD DRESSING
Greek salads are usually only dressed with olive oil and maybe lemon juice or red-wine vinegar. But this dressing is made of 'Greek' ingredients so, it's my Greek Dressing.

Steps:
- In a blender or food processor, whirl all the ingredients except the buttermilk for one minute.
- With the blender running, slowly pour in the buttermilk and blend until thick and creamy (turn off the blender as soon as the dressing thickens or it may curdle).
- Chill at least 1 hour so the flavours meld.
- Refrigerate, tightly covered.
- This makes nearly 2 cups of dressing and stays fresh for 3-4 days.
- If the dressing separates, just give it a whizz in the blender again.
CREAMY GREEK DRESSING
A recipe from The Best 30-minute Recipe of Cook's Illustrated. The flavor in this dressing work especially well with a leafy green salad with sliced cucumber and tomato. ETA : the taste is amazing. It's a bit hard to combine everything in the blender. Next time I'll use the food processor.

Steps:
- Process vinegar, shallot, garlic, oregano, mustard, 1/2 tsp salt, and 1/2 tsp pepper in blender until shallot and garlic are finely chopped, about 15 seconds.
- Add mayonnaise and sour cream, and continue to process until smooth, about 10 seconds.
- Add feta and pulse until just incorporated, about 5 pulses.

MARMIE'S CREAMY GREEK SALAD AND DRESSING
A wonderful fusion of flavors! I have tried dozens of Greek salad recipes, and so often they taste overly oily or plain. I have put together what I feel is the best of what I have made before and this is what I have come up with. (I need to write it down before I lose the scrap of paper I scribbled it on). I make a triple batch and keep it in the fridge... in a recycled store bought salad dressing bottle! I won't be buying Greek dressing ever again. Note: (I believe that recipezaar's nutritional information for this recipe is WAY out of wack... will investigate)

Steps:
- Combine first 10 dressing ingredients.
- Blend lightly with wand blender or use food processor.
- Slowly add E.V.O.O. while blending until dressing appears 'creamy'. Add Parmesan cheese and stir. Refrigerate.
- Combine the 9 salad ingredients, toss with a bit of the dressing, refrigerate until ready to serve.
- Serve in individual salad bowls or in a large salad bowl, Layer lettuce on the bottom of the bowl and top with rest of vegetables and dressing mixture. Drizzle more dressing on top if desired and a sprinkle of parmesan cheese.
- Reserve remaining dressing for another day.
