Delicately battered onion rings can be made at home without fuss; seltzer, or carbonated water, is the secret ingredient. Fried parsley adds a steakhouse flourish.

- Line a baking sheet with paper towels; set aside. Place onion rings in a large bowl of ice water for 10 minutes; drain and pat dry. In a large bowl, whisk together flour, cornstarch, baking powder, salt, and seltzer.
- In a heavy 5-quart pot or Dutch oven, heat oil over high until a deep-fry thermometer registers 375 degrees. Working in 7 to 8 batches, place onions in batter; using your fingers, lift out, letting excess drip off. Carefully place in oil, making sure not to overcrowd pot; cook until golden brown, 2 to 3 minutes.
- Transfer rings to prepared baking sheet, and season with salt. Keep warm in a 250-degree oven. Return oil to 375 degrees before starting next batch.
- Once all the onion rings are done, place on a platter. Very carefully place parsley in pot (oil will spatter), and fry until crisp, 10 seconds; remove, using a spider or slotted spoon, and season with salt. Sprinkle onions with parsley.

- Combine flour, cumin, cayenne, and 1 teaspoon salt in a medium bowl. Slowly whisk in buttermilk, beer, and egg until smooth. Let batter stand 15 minutes.
- In a large saucepan, heat oil over medium-high heat until a deep-fry thermometer registers 375 degrees. Working in batches, dip onion slices in batter, turning to coat. Gently drop slices into hot oil. Cook, turning rings once, until golden brown, about 2 minutes. (Adjust heat between batches as necessary to keep oil at a steady temperature.)
- Use a slotted spoon to transfer rings to a paper-towel-lined baking sheet to drain. Season immediately with salt.
BAKED ONION RINGS

- Cut onions into 1/2-in. slices; separate into rings and place in a bowl. Cover with ice water; soak for 30 minutes. Drain., In a small bowl, beat egg whites until foamy. - In a large shallow bowl, toss onions with buttermilk. In another large bowl, whisk together flour, cayenne, 1/2 teaspoon salt, and 1/4 teaspoon ground pepper. Sprinkle 1/2 cup flour mixture evenly on a rimmed baking sheet; set aside.
- In a 5-quart heavy-bottom saucepan, heat oil until a deep-fry thermometer registers between 325 and 350 degrees. Lift rings out of the buttermilk (letting excess drip off); toss with remaining flour mixture to coat. Place on floured sheet.
- Working in small batches, carefully place coated rings (shaking off excess flour) into hot oil. Cook until golden, gently turning with tongs, 2 to 3 minutes. Transfer rings to a paper-towel-lined baking sheet. Repeat with remaining rings.

MARTHA'S FAVORITE ONION RINGS
This recipe appears in our cookbook "Martha Stewart's Vegetables" (Clarkson Potter). Thinly layered, slightly spicy yellow onions are used to make the light, crisp rings at Balthazar in New York City. (This recipe is adapted from the restaurant's cookbook, and it is Martha's hands-down favorite.) Beer flavors the batter and adds body, thanks to the bubbles. Baking powder, a leavening agent, helps to enlarge these bubbles as the batter fries.

- Whisk together 1 cup flour, the salt, white pepper, and baking powder in a bowl. Whisk in beer and ice water until combined. Place remaining cup flour in a shallow dish.
- Preheat oven to 200 degrees, with a baking sheet on middle rack. Heat 3 inches of oil to 375 degrees in a medium pot over medium high. Dredge onions in flour, turning to coat; tap off excess. - Preheat oven to 450; pour oil onto rimmed baking sheet; set aside.
- Slice onion four times across, to make wide rings; discard the small inside ones (chop & freeze-dry for later use); set aside.
- Pulse cornflakes and breadcrumbs in blender/processor until very fine crumbs; transfer to medium bowl.
- In another medium bowl, whisk egg, milk, flour and seasonings.
- Place oiled baking sheet in oven for TWO MINUTES to heat up.
- Dip rings into egg mixture (let excess drip off), dredge in cornflake mixture; place on a plate.
- Arrange onion rings on heated oil-sheet; bake (turning once) until rings are golden brown (about 16 minutes).
- Season with more salt.
- SERVING SUGGESTIONS: Eat as is, with your choice of dipping sauce (ketchup, ketchup/yellow mustard, Zip's Sauce, ranch, barbecue, etc).
- Serve skinny cut rings over the top of your favorite burger. Especially good on mushroom-n-Swiss burgers!
OVEN BAKED ONION RINGS

- Preheat the oven to 450 degrees F.
- Spray a baking sheet slightly with oil and set aside. Place potato chips in the bowl of a food processor and process into crumbs, about 20 seconds. Transfer to a shallow bowl, add cayenne, and set aside. In another bowl, combine buttermilk, 2 tablespoons of flour, salt and pepper and set aside. Slice onions into 1/2-inch circles and separate into rings, keeping only large, whole rings (reserve rest of onions for other uses). You should come out with about 12 to 14 rings.
- Place the remaining flour in a sealable plastic bag, then add onions, and shake to coat. Dip onions 1 at a time into the buttermilk mixture, then dip into potato chip crumbs and place on baking sheet. Spray canola oil evenly over rings and bake for 20 minutes, or until coating is crisp. Season with salt, to taste, and serve immediately.
CRISPY CRUNCHY ONION RINGS

- Place onions in a large bowl filled with cold water and soak 10 minutes.
- Heat 2 inches of oil in a deep, heavy-bottomed pot to 365 degrees.
- In a medium bowl, whisk together flour, cornstarch, baking powder, and salt. Whisk in ice-cold water and place batter bowl over a bowl of ice.
- Drain Vidalia onions and dry thoroughly between layers of paper towels.
- Working one handful at a time, dip onions in batter, allowing excess to drip back into bowl, and gently place in oil. Fry, turning once, until crisp and golden, 3 minutes. Transfer to a paper towel-lined tray to drain and sprinkle with salt to taste.

I love onion rings but try to stay away from deep fried foods. These are exceptionally good. This recipe serves 4 but I'll bet 2 can go through the lot of them. - Preheat oven to 350 degrees.
- Spray a cookie sheet with lite olive oil or other veggie oil.
- Mix bread crumbs, oregano & cayenne (mix these ingredients on a sheet of wax paper it will make the next step easier).
- Dip onion rings into the milk and allow the excess to drip back into the bowl.
- Dip into the crumb mixture.
- They won't be fully coated, don't worry they will still have a crunch (especially with Panko crumbs).
- Place onion rings in a single layer on the cookie sheet.
- Bake onion rings until the crumbs are golden and the onions are soft (approx 30 minutes).
- Sprinkle with salt & pepper and then serve.

- In a large pot over medium-high heat, bring 3 inches (8 cm) of oil to 375˚F (190˚C).
- Peel and cut onions crosswise into ½ (1 ⅓ cm) inch slices.
- Separate into rings and place in a large bowl with ice water while you prepare the batter.
- In a medium mixing bowl, whisk together 1 cup flour (125 g), salt, white pepper, and baking powder.
- Whisk in beer and 2 tablespoons of ice water until just combined.
- In a separate bowl, add the remaining 1 cup (125 g) of flour.
- Remove the rings from the ice water bath and pat dry. Coat the rings first in the flour then in the batter, allowing any excess to drip off.
- Working in batches, transfer battered rings to hot oil to cook for 2 to 3 minutes, or until golden brown.
- Transfer to a paper towel lined rack to drain. Sprinkle with salt.

BAKED STUFFED ONION
A yellow onion is stuffed with mushrooms and potatoes, then baked.

- Heat oven to 450 degrees. Wrap garlic in aluminum foil, and cook until soft, about 45 minutes. Set aside until cool enough to handle. Cut off the top of garlic head, and squeeze flesh into a small bowl; set aside.
- Cut off top quarter from each onion, and wrap each onion in aluminum foil. Cook onions until soft, about 1 1/2 hours.
- Remove onions from oven, unwrap, and let cool 15 minutes. Peel, and discard skins. Working from the center of each onion, pull out all but two outer layers, leaving a shell. Place shells in a small baking dish. Measure 3 cups of onion flesh.
- Place half of the onion flesh in the bowl of a food processor. Add basil, parsley, reserved garlic flesh, 1 teaspoon salt, and 1/8 teaspoon pepper. Puree, and set aside.
- Bring a large saucepan of water to a boil. Peel potatoes, and cut into 2-inch cubes. Cook potatoes until fork tender, about 20 minutes; drain in a colander.
- Pass potatoes through a ricer set over a large bowl. Slowly whisk in pureed onion mixture. Set potato filling aside.
- Coat a small saute pan with cooking spray, and set over medium heat. Add one variety of mushroom. Season with remaining 1 1/2 teaspoons salt and 1/8 teaspoon pepper; cover. Cook, stirring occasionally, until tender and slightly golden. Transfer mushrooms to a bowl. Repeat cooking process with remaining mushrooms. Roughly chop remaining onion flesh; stir into mushroom filling.
- Stuff onion shells with alternating spoonfuls of potato and mushroom fillings. Spray with cooking spray. Add wine to baking dish.
- Bake stuffed onions until they are soft and golden, about 30 minutes. Let onions cool slightly, and serve warm.
