MARTHA'S BROWN-SUGAR EASTER COOKIES
For an egg-shaped cookie cutter, you can start with an oval cutter and bend one end into a slight point.

Steps:
- Whisk together flour, baking powder, and salt in a bowl. In another bowl, beat butter with sugars on medium speed until pale and fluffy, about 3 minutes. Beat in eggs and vanilla. Reduce speed to low; gradually beat in flour mixture. Divide dough in half; flatten into disks. Wrap each in plastic and refrigerate until firm, 1 hour or overnight.
- Preheat oven to 325 degrees. Let dough stand at room temperature until pliable. Roll out on a lightly floured surface to just under 1/4 inch thick, dusting with flour as needed. Cut out shapes with cutters; transfer to parchment-lined baking sheets. Reroll scraps and repeat. Freeze until firm, about 15 minutes. Bake until golden, rotating sheets once, about 18 minutes. Let cool completely on sheets on wire racks.
- For cookies with white and colored dots: Use a pastry bag fitted with a small round tip (such as #3) to make icing dots (about half as many dots as you want on finished cookies). Sprinkle with sanding sugar and let set, then shake off excess sugar. Pipe additional dots on cookies; let dry.
- To coat cookie surface with icing: Place icing in a shallow dish and carefully dip cookie into icing, leaving a thin border. Transfer to a wire rack and sprinkle with sanding sugar, if desired. Let set and shake off excess sugar. If desired, pipe additional dots on cookies (or pipe a dot for a rabbit's eye). Let dry overnight. Cookies can be stored between layers of parchment up to 1 week.
BASIC SUGAR COOKIES
Sugar cookies are a buttery classic that make a delicious anytime treat. Enjoy your sugar cookies plain, or decorate them with icing to make them festive. This recipe is a favorite of Martha's, who likes to add one tablespoon cognac alongside the egg and vanilla, after creaming together the butter and sugar.

- In large bowl, whisk flour, baking powder, and salt. With an electric mixer, cream butter and sugar until light and fluffy. Beat in egg and vanilla. With mixer on low, gradually add flour mixture; beat until combined. Divide dough in half; flatten into disks. Wrap each in plastic; freeze until firm, at least 20 minutes, or place in a resealable plastic bag, and freeze up to 3 months (thaw in refrigerator overnight).
- Preheat oven to 325 degrees. Line baking sheets with parchment. Remove one dough disk; let stand 5 to 10 minutes. Roll out 1/8 inch thick between two sheets of floured parchment, dusting dough with flour as needed. Cut shapes with cookie cutters. Using a spatula, transfer to prepared baking sheets. (If dough gets soft, chill 10 minutes.) Reroll scraps; cut shapes. Repeat with remaining dough.
- Bake, rotating halfway through, until edges are golden, 10 to 18 minutes (depending on size). Cool completely on wire racks. To ice cookies, spread with the back of a spoon. Let the icing harden, about 20 minutes. Decorate as desired.
- For the icing, sift confectioners' sugar into a small bowl. Whisk in milk, water, or lemon juice, 1 tablespoon at a time, until smooth and thick enough to coat the back of a spoon. If too thin, whisk in more sugar; if too thick, add more liquid. Spread over cookies with back of a spoon. Add other decorations, if desired. Let the icing harden, about 20 minutes.

- Sift flour, baking powder, and salt into a bowl. In a separate bowl, beat butter and sugar with a mixer on medium speed until pale and fluffy, about 3 minutes. Beat in eggs and vanilla. Reduce speed to low. Gradually mix in flour mixture. Turn out dough, and divide in half. Flatten each half into a disk, and wrap in plastic. Refrigerate until firm, at least 1 hour or overnight.
- Preheat oven to 325 degrees, with racks in upper and lower thirds of oven. Let one disk of dough stand at room temperature just until soft enough to roll, about 10 minutes. Roll out dough on a lightly floured work surface to just under 1/4-inch thick, adding more flour as needed to keep dough from sticking. Chill in refrigerator until firm, about 30 minutes. Cut out cookies using desired cutters or templates. Transfer to parchment-lined baking sheets as you work. Roll out scraps, and repeat once. Repeat with remaining disk of dough. Chill cookies in freezer until very firm, about 15 minutes.
- Bake cookies, switching positions of sheets and rotating halfway through, until edges turn golden, 15 to 18 minutes. Let cool on sheets on wire racks. Decorate with Royal Icing.
EASTER CHICK COOKIES

- Shortbread Cookies: Line 2 rimmed baking sheets with parchment. Whisk together flour and salt. In the bowl of a mixer fitted with the paddle attachment, beat butter until fluffy, 3 to 5 minutes. Add sugar, and continue to beat until pale and fluffy, occasionally scraping down the sides of bowl, about 2 minutes more. Beat in vanilla. Add flour mixture, and mix on low speed, scraping sides if necessary, until flour is just incorporated and dough sticks together when squeezed with fingers.
- Turn out dough, forming into 2 disks; wrap each in plastic. Refrigerate until firm, at least 1 hour.
- Preheat oven to 325 degrees. To create an egg shape, pinch one end of a 2 1/2-inch-tall oval cookie cutter. Roll out 1 disk to a 1/4-inch thickness; stamp out shapes. Reroll scraps. Repeat with remaining disk.
- Bake until firm and golden, 13 to 15 minutes. For flatter cookies, tap sheets on counter halfway through baking and again afterward. Let cool on wire racks.
- Lemon Icing: Stir together sugar and lemon juice. Add food coloring. Transfer to a small squeeze bottle. Outline cookies with icing 1/4 inch from edges, then fill in centers.
- Set up a candy bar and get creative with decorating. For the chicks: Dip an iced cookie in sanding sugar. Let dry; store in an airtight container up to 5 days. Dot candy sequins with icing; overlap to create feathers. Use orange sprinkles for feet, a candy heart for a beak, and upside-down mini chocolate chips for eyes. For the eggs: Lay orange or yellow sprinkles in a zigzag pattern halfway up an iced cookie. Sprinkle bottom with sanding sugar.

- In a bowl, cream butter, cream cheese and sugar. Beat in egg yolk and extracts. Combine the flour, salt and baking soda; gradually add to creamed mixture. Cover and refrigerate for 3 hours or until easy to handle., Preheat oven to 375°. On a lightly floured surface, roll out dough to 1/8-in. thickness.
