- Set a steamer basket in a wide pot containing 1 inch water. Bring to a boil, then reduce heat to medium. Form turkey mixture into eight 1/2-inch-thick patties. Steam, covered, until a thermometer inserted into patties reads 165 degrees, 3 to 5 minutes. Transfer to a plate; pat dry. Heat a large skillet over high; swirl in oil. Sear burgers, flipping once, until golden, about 2 minutes total. Cook breads over an open burner or under the broiler, turning occasionally, until charred in spots, 30 seconds. Spread with hummus; top each with 2 patties, cucumber, arugula, and parsley leaves. Drizzle with sauce and oil, season with salt and pepper, and serve.
OUR FAVORITE TURKEY BURGER
These tasty burgers incorporate shredded Gruyère cheese and Dijon mustard in the patty, rather than on top, which prevents the bun from getting soggy. Breadcrumbs add even more texture.

MINI TURKEY BURGERS - MARTHA STEWART
These moist, teeny-tiny bites are proof positive that bigger isn't always better. They're huge on taste -- with little effort. For juicy burgers, choose ground turkey that's labeled 7 percent fat or 93 percent lean.

TURKEY BURGERS WITH CREAMY CHIPOTLE SAUCE
The creamy chipotle sauce complements the smoky flavor from the grill in these turkey burgers. White meat could be substituted for dark, but the burgers won't be as juicy. Serve these with our Wild Rice Salad as a side dish.

HAWAIIAN TURKEY BURGERS

Sandwich the stack in a plush Hawaiian bun with lettuce, red onion, and a smear of kicky jalapeño mayo, and take a vacation without leaving your lanai.

- Brush grates with vegetable oil. Grill pineapple until lightly charred on both sides and softened, 4 to 5 minutes. If desired, grill split sides of buns until lightly charred, about 30 seconds.
- Grill patties until slightly charred and just cooked through, 6 to 8 minutes a side. In last minute of cooking, top each patty with cheese, cover grill, and let melt.
- Stir together mayonnaise and jalapeño. Spread buns with mayonnaise mixture and use to sandwich patties, pineapple, lettuce, and onion.
TURKEY BURGERS
Turkey burgers are much leaner than hamburgers, but they can be dry and dull. Moisten them by adding ketchup and a bit of grated onion to the ground turkey - or mayonnaise and a bit of mustard. The idea is to emphasize condiments, and keep the turkey moist.

Steps:
- Grate the onion on the fine holes of a grater. You should have about two tablespoons of grated onion (and a lot of juice, which you can discard). Place in a bowl with the ground turkey, Worcestershire sauce, ketchup, salt and pepper. Using a fork, mix together well. Shape into four patties - the mixture will be quite moist - and press the patties into ½-inch thick rounds.
- Heat the canola oil in a nonstick griddle or large nonstick frying pan over medium-high heat. (Alternately, spray the griddle or pan with pan spray.) When you can feel the heat while holding your hand just above griddle or pan, cook the patties for five minutes on each side. Serve on buns, with the condiments of your choice.

HOW TO MAKE THE PERFECT TURKEY BURGER IN 5 SIMPLE STEPS
From marthastewart.com
- Choose Your Meat. Our ideal turkey burger is made with dark meat or a combination of dark and white. The higher fat content of dark meat, which is still leaner than beef, translates to super flavorful, juicy patties.
- Use a Binder. Use breadcrumbs to bind the patties together and help them retain their shape. Fresh breadcrumbs (made from fresh bread pulsed in the food processor or torn into small bits) are best here, as they retain some moisture which helps to keep them from drying out the burger.
- Add Flavor. More mild tasting than beef, turkey is a blank canvas that won't overpower other ingredients, allowing you to really customize the patty to your desired flavor profile.
- Form Your Patties. For tender, perfect patties that fit perfectly inside the bun and hold their shape, follow these tips. Use cold turkey meat, which is firmer than room temperature.
- Cook the Burger. Turkey burgers need to be cooked all the way through, but you don't want to overdo it and ruin your efforts to keep the patty moist and flavorful.
