Steps:

• Cream sugar and shortening. Add bananas and eggs.
• Sift dry ingredients and add them to the bananas, but don't overmix it.
• Bake in greased loaf pan at 350 F for about 35 minutes.

Steps:

• Preheat oven to 350°F
• Combine the oil, eggs, sugar, and vanilla in a large bowl and blend well.
• Add the Zucchini and pineapple.
• Mix the dry ingredients and spices together and add them to the zucchini mixture.
• Add the raisins and pecans and mix well.
• Pour the mixture into 2 greased floured loaf pans.
• Bake 1 hour or until bread tests done.
• Cool in pans for 30 minutes.
• Turn out on a rack to cool completely.
• Wrap in plastic; refrigerate one day before serving.

Steps:

• Oven to 350 degrees. Grease two 9" loaf pans. Combine butter and sugar, beat with electric mixer until creamy and pale yellow. Beat in eggs, one at a time, then add bananas. Sift together flour, soda and salt. Add to banana mixture and stir just until incorporated. Mix in nuts. Divide batter between two prepared pans and bake 50-60 minutes or toothpick test. Let each loaf cool in pan 10 minutes then remove to wire rack to cool completely.
