MAUI TACOS' FISH TACO WITH PINEAPPLE TOMATO SALSA
Steps:
- Combine pineapple juice, lime juice, salt, oregano, garlic and pepper. Mix well. Pour this mixture over the Mahi Mahi and let marinate for 24 hours. Remove the fish from the marinade and cut into 1/4-inch cubes. Grill or saute the fish. Place the fish in the tortillas and garnish with cilantro, onion and Pineapple Tomato Salsa.
- Add the pineapple to a blender. Combine the tomatoes and tomatillo in a bowl and mix well. Add half of the tomatoes to the blender. Add the lime juice, garlic, ginger and salt and pepper to the blender. Blend until smooth. Pour into a bowl and add the remaining tomatoes, cilantro, mint and jalapeno and mix well. Season to taste with salt and pepper.

- To prepare Pineapple Salsa, combine pineapple, red and green peppers, cilantro, 1 tablespoon lime juice, red pepper flakes and lime peel in medium bowl.
- (Pineapple Salsa may be prepared 1 to 2 days ahead and refrigerated.).
- Preheat broiler.
- Spray rack of broiler pan with cooking spray.
- Rinse mahi-mahi and pat dry with paper towels.
- Place mahi-mahi on rack.
- Combine remaining 1 tablespoon lime juice and olive oil; brush on mahi-mahi.
- Broil mahi-mahi, 4 inches from heat, 2 minutes.
- Turn and brush second side with olive oil mixture; sprinkle with white pepper.
- Continue to broil 2 minutes or until mahi-mahi flakes easily when tested with fork.
- Serve with Pineapple Salsa.

- Combine orange juice, lime juice, sea salt, and pepper in a bowl. Add pineapple juice from the can and whisk to combine. Refrigerate pineapple chunks until needed.
- Place mahi mahi fillets in a large glass or ceramic bowl. Add marinade and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 3 hours.
- Preheat the oven to 375 degrees F (190 degrees C). Cover a rimmed baking sheet with foil and spray foil with cooking spray.
- Remove fillets from the marinade and shake off excess. Discard the remaining marinade. Place fillets on the prepared baking sheet. Top with green onions and macadamia nuts.
- Bake in the preheated oven until fish is white and flakes easily with a fork, 25 to 30 minutes.
- Top fillets with reserved pineapple chunks.
