BIG ISLAND TOMATO AND MAUI ONION SALAD

- In a bowl, combine the tomatoes and Maui onion. Season with salt and pepper and toss to combine. Add the Maui Onion Dressing and toss to combine. Place the greens on a large platter and season with salt. Top with the tomato salad and serve.
- Preheat the oven to 350 degrees F. Place the onion on a large piece of aluminum foil. Drizzle the onion with 2 tablespoons of the olive oil and season with salt and pepper. Wrap the onion tightly in the foil and roast until tender and lightly golden brown, about 50 minutes to 1 hour.
- Remove from the oven and cool. When cool, roughly chop the onion and place in the bowl of a food processor. Process until smooth. With the machine running, slowly add the remaining 1/4 to 1/2 cup olive oil through the feed tube, until the dressing is smooth. Season with salt and pepper.

- Combine the onion, garlic and papaya seeds in the container of a blender or food processor. Blend until smooth. Add the sugar, mustard, lemon juice, vinegar and mayonnaise; puree until blended inches Set to low speed and pour in the vegetable oil in a thin stream. Chill and serve with fresh salad greens.

- In a large bowl, combine the kale, cabbage, cranberries, and sweet onion dressing. Toss to coat and mix thoroughly, using your hands if desired. Transfer to the fridge and let chill for at least 15 minutes.
- When ready to serve, add the potato chips and peanuts and toss to combine. Season with a pinch of salt, if needed.
MAUI ONION TOMATO SALAD WITH PANCETTA AND BASIL BALSAMIC VINAIGRETTE

- Make vinaigrette: heat the olive oil in a large saute pan and saute the pancetta, garlic and shallot over medium-high heat for 1 minute. Remove from the heat and stir in the vinegar and half of the basil. Add the onions and return to the heat for about 30 seconds. Remove from the heat and stir in the remaining basil.
- Core the tomatoes; cut a slice off the tops and bottoms and discard. Cut each tomato into 3 thick slices. Try and keep the slices in order!
- To assemble: place a bottom tomato slice on each serving plate. Place a layer of the greens on top of the tomato, using up about half the greens. Place a layer of the onions and a little of the vinaigrette over the greens, and then the center tomato slice. Add another layer of the greens (use the rest), onions (save some for garnish) and top with the last slice of tomato. Garnish with onion and a basil sprig.

This recipe is way, way too easy! My good friend, Marleene told me about this cooking technique which I think she got from a restaurant in Hawaii. The beauty of this recipe is that it is fat free, loaded with taste, kid friendly, virtually low in calories and did I mention....way to easy??!!

- Cut the onion into strips. Sprinkle lightly with salt, and let it sit for at least 10 minutes to draw out the juices from the onion.
- Spray large skillet with Pam and let heat. Add onions and cook on low heat for 15 - 20 minutes, stirring occasionally, until onion is golden.
