Maui Tofu image

Steps:

  • Heat the sesame oil, vegetable oil and soy sauce over high heat in a large saucepan or wok and saute the onion and peppers for 5 minutes.
  • Add the garlic and ginger, cooking for 1 more minute.
  • Add the pineapple, stock and tofu and simmer for 15 minutes.
  • Toss in the shredded cabbage.
  • Serve over rice immediately.

2 tablespoons toasted sesame oil
2 teaspoons vegetable oil
1/4 cup soy sauce
1 medium onion, sliced
1 medium green bell pepper, seeded and sliced
1 medium red bell pepper, seeded and sliced
2 garlic cloves, minced
2 tablespoons fresh ginger, grated
1 cup chopped pineapple, with juices
1 cup vegetable stock
1 lb extra firm tofu, cubed
1/4 head green cabbage, shredded
3 cups cooked brown rice

Steps:

  • Preheat oven to 400°. Blot tofu dry. Cut into 3/4-in. cubes. Place on a clean kitchen towel; cover with another towel. Place a cutting board on top; gently place a large cast iron skillet on top. Let stand 10 minutes. , Meanwhile, in a shallow dish, whisk together soy sauce, olive oil, sesame oil, salt, garlic powder and pepper. Place cornstarch in a separate shallow dish. Add tofu to soy mixture; turn to coat. Add tofu, a few pieces at a time, to the cornstarch; toss to coat. Place on a parchment paper-lined baking sheet. Bake until cubes are golden brown and crispy, 25-30 minutes, turning halfway through. Garnish with green onions, if desired.

  • Drain and pat dry the tofu. Cut the tofu in half lengthwise. Cut each half into ten pieces. You should have 20 small squares total.
  • Heat pan to medium heat. Add a tablespoon of oil, swirl around to coat the pan. Place all 20 pieces in the pan and turn the heat down to low. Cook for 6-8 minutes, then flip and cook the other side for 6-8 minutes. You want both sides of the tofu to be golden brown.
  • While the tofu is cooking, make the sauce. In a small bowl, mix together the soy sauce, honey, sesame oil, garlic, half the green onions, and chili flakes.
  • Arrange the finished tofu on a plate, and drizzle the sauce over. Sprinkle the remaining green onions and toasted sesame seeds on top. Enjoy! Amazing hot and just as good at room temperature.
