BALSAMIC CHICKEN
A tasty, easy-to-make chicken dish -- my husband loves it. Sometimes I cut the chicken in strips,and serve over pasta.

- Whisk together the balsamic vinegar, chicken broth, sugar, garlic, and Italian seasoning in a bowl, place the chicken breasts in the marinade, and marinate for 10 minutes on each side.
- Heat the olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade and reserve the marinade. Place the chicken in the heated pan and cook until they start to brown and are no longer pink inside, about 7 minutes per side. Pour the marinade into the skillet, and cook until it thickens slightly, turning the chicken breasts over once or twice, about 5 minutes.

Steps:
- Preheat oven to 400 degrees.
- Heat oil in non-stick skilled over medium high heat.
- Lightly brown chicken pieces and transfer to shallow, oven-rpoof dish.
- Combine tomatoes, red peppers, vinegar, capers and chili flakes.
- Pour over chicken.
- Bake in oven for 25 minutes or until cooked through.
- Remove from oven.
- If desired, thicken sauce with mixture of cornstarch and water.
- Sprinkle fresh basil and parsley over top.
- Serve the chicken and sauce over rice or couscous.

- Heat oven to 400°F. Line 18x13-inch rimmed sheet pan with cooking parchment paper. In large bowl, mix 1 tablespoon of the oil and the salt. Add potatoes to bowl; toss to coat and place skin-sides down in single layer in pan. Set bowl aside. Roast 15 minutes. Remove from oven; stir.
- Meanwhile, combine remaining 3 tablespoons oil and the seasoning mix (from box) in same large bowl. Add chicken; turn to coat. Place chicken in pan with potatoes. Roast 22 to 27 minutes longer or until juice of chicken is clear when center of thickest part is cut (at least 165°F) and potatoes are very tender and browned.
- Drizzle with sauce (from box). Top with tomatoes, cheese, onions and basil.

- In a small bowl, whisk the olive oil, balsamic vinegars, mustard, garlic, lemon juice, herbs, and salt and pepper. Reserve half of the marinade and add the other half to the bowl or bag with the cihcken. Marinate for at least 30 minutes up to overnight, turning occasionally.
- Oil the grill grates well and drizzle the chicken breasts with more olive oil, then place the chicken breasts on the hot grill. Cook for 2-3 minutes or until grill marks appear, then flip the chicken and cook for another 2-3 minutes. Move the chicken to the cooler grates of the grill, cover, and cook for 10 minutes. Transfer a few tablespoons of the reserved marinade to another bowl and use it to baste the chicken with and flip. Continue cooking, basting, and flipping until the breasts have an internal temperature of 165 degrees. Move the chicken to the hot side of the grill to add more grill marks and color to the chicken breast but be sure to watch them so the balsamic marinade doesn't burn.The length of cooking time will depend up on the thickness of the breasts but you should count on the whole cooking time to be about 30 minutes.
