GRILLED CHICKEN BLT WITH GREEN GODDESS SAUCE

Grilled Chicken BLT with Green Goddess Sauce image

Steps:

  • Preheat a grill to medium high. Make the green goddess sauce: Combine the mayonnaise, chives, parsley, tarragon, capers, anchovy, garlic, lemon juice and a pinch each of salt and pepper in a small food processor. Puree until bright green and smooth. Transfer to a small bowl and stir in the sour cream. Season with salt and pepper. Thin with water if needed. Refrigerate until ready to use.
  • Make the sandwiches: Season the chicken with salt and pepper and rub with the olive oil. Grill, flipping once, until well marked on both sides and cooked through, 6 to 8 minutes. Remove to a plate. Grill the buns until toasted.
  • Serve the chicken on the buns with the green goddess sauce, tomatoes, bacon and lettuce.

1/3 cup mayonnaise
1/4 cup finely chopped fresh chives
1/4 cup finely chopped fresh parsley
2 tablespoons chopped fresh tarragon
1 tablespoon capers, drained
1 anchovy fillet
1 clove garlic, minced
5 teaspoons fresh lemon juice
Kosher salt and freshly ground pepper
1/3 cup sour cream
4 thin chicken cutlets (4 to 5 ounces each)

4 hamburger buns, split
Sliced tomatoes, cooked thick-cut bacon and Boston lettuce, for topping

MEDITERRANEAN GRILLED CHICKEN BLT

A nice sandwich to make for a luncheon, a romantic picnic or outdoor family outing in nice weather; make ahead of time, refrigerate and serve later. Or serve hot aside soup or salad for a comfort food type of dinner during the cold winter months. I've used the George Foreman to grill the chicken and have grilled the sun-dried tomatoes atop the breast, along with dried oregano seasoning.

Steps:

  • Slice a"pocket" into the side of each chicken breast; stuff with a sun-dried tomato and 2 sprigs of oregano.
  • Rub chicken with 1 Tbsp oil from the sun-dried tomatoes and season with the salt and pepper.
  • Grill and baste with remaining 1 Tbsp oil from the tomatoes (internal temp 180 when chicken is done).
  • While chicken is grilling, combine ingredients for the dressing in a small bowl.
  • Remove chicken and cut into long, thin slices.
  • Spread the bottom part of the focaccia bread with the dressing; divide chicken slices (enough for 4 sandwiches) and add, as well as 2 slices bacon, tomato slices and lettuce leaf per sandwich.

4 boneless skinless chicken breasts (about 1 lb)
4 sun-dried tomatoes packed in oil
8 sprigs fresh oregano

Steps:

  • Heat closed contact grill 5 minutes. When grill is heated, place bacon on bottom grill surface. Close grill; cook 4 to 6 minutes, turning once, until crisp. Drain on paper towels.
  • Meanwhile, place 1 chicken breast, boned side up, between 2 sheets of plastic wrap or waxed paper. With flat side of meat mallet or rolling pin and working from center, gently pound chicken until 1/4 inch thick; remove wrap. Repeat with remaining chicken breast. Sprinkle chicken with Italian seasoning.
  • Place chicken on bottom grill surface. Close grill; cook 4 to 6 minutes or until fork-tender and juices run clear.
  • Spread toasted bread slices with mayonnaise. Layer lettuce, tomato, chicken and bacon between toast slices.

  • Give the chicken breasts a small slice with a knife or pierce with a fork, and then generously season with salt and pepper on both sides. Add to plastic bag with marinade.
