MEDITERRANEAN LENTIL PATTIES
I got this recipe from VegCooking.com. If you haven't checked it out yet, it's a GREAT vegan website. These crispy cakes are a perfect substitue for a burger. In a pita with this sauce, lettuce, tomato, and cucumber, you've got yourself a great Mediterranean meal. Enjoy!

Steps:
- For the Lentil Cakes:.
- Submerge lentils in a large pot. add an additional 2 inches of water.
- Boil for 20 minutes, or until tender.
- Sauté the onion, pepper, and celery in the olive oil until the onions are slightly browned.
- Combine the lentils, vegetables, Dijon mustard, lemon juice, parsley, brown rice, and tahini (mixture should be sticky).
- Form into patties.
- Roll in the ground bread crumbs and refrigerate while making the sauce.
- When the sauce is done, pan-fry each patty until browned.
- For the Sauce:.
- Sauté the garlic in the olive oil, add cumin, and remove from the heat.
- Add the remaining ingredients.
- Adjust the amount of water for the desired consistency.
- Serve over the lentil cakes.

- In a saucepan combine lentils, carrots, onion, garlic, bay leaf, and thyme. Add enough water to cover by 1 inch. Bring to boil, reduce heat and simmer uncovered for 15 to 20 minutes or until lentils are tender but not mushy.
- Drain lentils and vegetables and remove bay leaf. Add olive oil, lemon juice, celery, parsley, salt and pepper. Toss to mix and serve at room temperature.

- Add lentils and water to a saucepan and bring to a rolling boil over medium high heat. Then reduce heat to medium/medium-low, or until a mild simmer is achieved.
- Cook for 20-30 minutes, or until most liquid is absorbed and the lentils are tender and not mushy, or 'al dente.' (Mine only took about 18 minutes.)
- Strain to remove any remaining water, then return lentils to saucepan off heat. Season with salt and pepper, maple syrup, lemon juice, and olive oil. Stir to coat. Sample and adjust seasonings as needed. You want them to be flavorful on their own, and not bland, so don't be shy.
- While lentils are cooking, heat a skillet over medium heat. Once hot, add olive oil and shallots and stir. Cook for 2-3 minutes, or until slightly softened. Then add garlic and cook for 1-2 minutes more, or until just lightly golden brown. Remove from heat but leave in skillet.

- Place the oats and cashews in a food processor fitted with the ‘S’ blade. Grind into a meal. Transfer into a large bowl. Add the cooked lentils to the food processor and pulse five times. Transfer the ground lentils into the bowl and stir to combine.
- Warm the olive oil in a large skillet over medium heat. Add the onion, garlic, and a small pinch of salt. Cook, stirring occasionally, until soft and translucent, about five minutes. Add the bell pepper and cook three minutes more. Stir in the salt, pepper, oregano, fresh herbs, sun-dried tomatoes, olives, balsamic, lemon juice, and nutritional yeast. Remove from the heat.
- Transfer this mixture into the bowl of ground cashews/oats/lentils. Add the ground flax and mix well to combine. (I like to use my hands to make sure that everything gets mixed together well.)
- Preheat the oven to 375 degrees Fahrenheit and line one very large or two medium baking sheet(s) with parchment paper.
