MEDITERRANEAN MEATLOAF

This is a nice substitute for regular meatloaf. We're not big fans of traditional meatloaf but we really like this dish. I've served it with a Greek salad, marinated olives and bread. From an AP food story in the newspaper which said the recipe was developed by the Quaker Oat Company.

Mediterranean Meatloaf image

Steps:

  • Heat oven to 400°F Soften tomatoes according to package directions; coarsely chop and set aside.
  • In small skillet, cook spinach and onion over low heat 4 to 5 minutes or until onion is tender.
  • Remove from heat; cool slightly.
  • Stir in cheese; set aside.
  • In large bowl, combine turkey, oats, garlic powder, oregano, salt, if desired, pepper, milk and sun-dried tomatoes; mix lightly but thoroughly.
  • Shape 2/3 of turkey mixture into 9-by-6-inch loaf in 13-by-9-inch baking dish.
  • Make a deep indentation down center of turkey mixture, leaving about 1 1/2 inches around edges of loaf; fill with spinach mixture.
  • Top with remaining turkey mixture to completely cover spinach filling; pinch edges to seal.
  • Bake 30 to 35 minutes or until juices run clear when pierced with fork.
  • Let stand 5 minutes before slicing.

1 (10 ounce) package frozen chopped spinach, thawed and drained

Steps:

  • In a large bowl combine all of the above ingredients.
  • Knead ingredients together until thoroughly blended.
  • Place the meat mixture in a non stick roasting pan and pat to form into a loaf shape.
  • Bake in a preheated 350°F oven for about 45 minutes.

Steps:

  • Preheat the oven to 350 degrees F. Spray an 8 1/2-by-4 1/2-inch loaf pan with cooking spray. Line the pan lengthwise with a long strip of parchment, rubbing it to adhere it to the pan and making sure it is long enough to hang over the ends of the pan.
  • Put the beef, lamb and pork into a large mixing bowl and add the olives, onions, crushed saltines, yogurt, mint, oregano, cumin, garlic and egg. Add the hot sauce, salt and some ground pepper and very gently mix with your hands until the ingredients are evenly incorporated. Add the feta and mix lightly, incorporating the feta in whole crumbles if possible. Try not to overmix; it can make the meatloaf tough.
  • Transfer the meat mixture to the pan and press it gently to eliminate any air pockets. Set the loaf pan on a baking sheet and bake until an instant-read thermometer inserted into the center registers 155 degrees F, 40 to 45 minutes.
  • Let the meatloaf cool in the pan for about 20 minutes before using the parchment paper to lift it out of the pan and transfer it to a serving platter. Slice while warm and serve with the Mint Tzatziki on the side.
  • Grate the cucumber on the large holes of a box grater into a large fine-mesh strainer set over a bowl. Sprinkle the cucumber generously with salt, tossing a few times with your hands to evenly distribute it; let stand for 10 minutes to drain.
  • Using your hands, squeeze the cucumber to drain any excess moisture. Transfer to a mixing bowl and add the yogurt, mint and garlic. Stir well to combine, taste and adjust the seasoning with salt if necessary.
  • Store the tzatziki in an airtight container for up to 3 days.

  • Preheat oven to 450°F.
  • Microwave the carrots and onion on high for 3 minutes (they should be slightly shriveled).
  • Mix the microwaved vegetables with the bread crumbs, ground turkey, and egg white. Add salt if using and pepper.
  • Line a baking sheet with foil, shape the turkey mixture into 2 6x3-inch loaves and place on the foil, bake uncovered, for 15 minutes in the preheated oven.
  • Meanwhile, prepare the tomato sauce by mixing the olives, pepper flakes and crushed tomatoes with their liquid together; microwave on high for 2 minutes, or until warmed through.
  • Remove the meat loaves from the oven; divide the tomato mixture into two equal servings, pour the tomato mixture in equal amounts over the meat loaves.

MEDITERRANEAN STYLE MEATLOAF

I call this recipe Mediterranean style because instead of using any breadcrumbs to bind the meatloaf, fine bulgur wheat is used. This is also used throughout the Mediterranean to make meatballs and kebabs. I buy bulgur in a Turkish market. They sell three different grinds of bulgur wheat. A coarse grind, which is brown in color and resembles buckwheat groats and cooks up like rice; a medium grind, which is a pasta color and just has to be soaked for 20 minutes in water; and the very fine grind which is like really tiny, tiny pasta (it had no instructions for cooking, but the package stated that it was for meatballs). I like to use bulgur instead of white rice or, in this case, breadcrumbs because it has a lower glycemic index and is packed with nutrients and proteins. Instead of the seasoning listed you could use a good seasoned salt or my current favorite, Badia Complete Seasoning.

  • In a large mixing bowl, lightly beat egg.

  • Preheat the oven to 350°. Add all ingredients for the meatloaf to a large mixing bowl (with the exception of the coatings). I usually add 2 large pinches of salt and several grinds of black pepper, but you can adjust that to your own taste. Work the ingredients through the meat mixture just enough to incorporate (it doesn’t matter if ingredients aren’t distributed uniformly. Check the consistency of your mixture: you want to be able to form it into a loaf without having it fall apart, but you don’t want it to be too dry. If the mixture is too wet and falling apart, add an additional 1/4 cup of breadcrumbs. If the mixture is too dry, add another tbsp. of tomato sauce (more if needed).
  • Line a baking sheet with aluminum foil. Set a baking rack onto the foil and coat generously with cooking spray. Form the meat mixture into a loaf, making sure that it’s roughly the same thickness throughout for even cooking. Rub on the tomato sauce and sprinkle with Romano cheese. Sprinkle lightly with salt and fresh-ground pepper.
  • Tent some aluminum foil over the meatloaf: I sometimes lay 2 pieces of foil over each other and fold one side of the long ends over several times. This is the “spine” of the tent. The foil doesn’t need to cover the meatloaf tightly: just tuck the open ends down toward the baking rack. Place the meatloaf in the oven.
  • Meanwhile, make the sauce. Heat the olive oil in a skillet over medium-high heat. Add the peppers, onions, and garlic. Sauté until soft and translucent, 6-8 minutes. Add the crushed tomatoes and tomato sauce, stir to combine. Sprinkle with the vinegar and sugar or Splenda; stir. Bring almost to a boil, then reduce heat to a low simmer. Stir occasionally to prevent scorching. Simmer for 45 minutes.
