Mediterranean Apricot Phyllo Bites image

Steps:

  • Place almonds and apricots in a food processor; cover and process until finely chopped. In a small bowl, combine 1 tablespoon butter, honey, lemon zest and extract; add almond mixture and stir until blended., Lightly brush one sheet of phyllo with remaining butter; place another sheet of phyllo on top and brush with butter. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.) Cut the two layered sheets into three 14x3-in. strips., Place 1-1/2 teaspoons filling in lower corner of each strip. Fold dough over filling, forming a triangle. Fold triangle up, then fold triangle over, forming another triangle. Continue folding, like a flag, until you come to the end of the strip. Brush end of dough with butter and press onto triangle to seal. Turn triangle and brush top with melted butter. Repeat., Place triangles on a greased baking sheet. Bake at 375° for 10-12 minutes or until golden brown. Cool on a wire rack. Sprinkle with confectioners' sugar.

Cream Cheese Chicken Tacos image

Steps:

  • 1. Preheat oven to 425 degrees
  • 2. While oven is preheating, heat about a tablespoon of oil in a skillet. Fry tortillas, 1 at a time over medium heat until just very lightly browned. Repeat with all tortillas. Use more oil as needed. Set aside on a wire rack or paper towels to drain.
  • 3. Place the cream cheese in a sauce pan over low heat, Stir until cream cheese is completely melted.
  • 4. Add the shredded chicken, garlic, green onion, and cheddar cheese. Remove the saucepan from heat and stir until well combined.
  • 5. Divide the chicken mixture evenly between each shell. Place the taco shells in a 9x13 inch baking dish. Bake for about 8-10 minutes or until the shells are starting to brown well.

1 pkg (8 oz.) cream cheese
2 clove garlic, minced
2 c deli rotisserie chicken, or leftover roast/baked chicken shredded
1 bunch green onion, thinly sliced

Steps:

  • Line a strainer with 4 layers of cheesecloth or 1 coffee filter and place over a bowl. Place yogurt in prepared strainer and cover with edges of cheesecloth. Refrigerate for 8 hours or overnight. In a small bowl, combine the strained yogurt, cucumber, vinegar and mint., Spread hummus in the bottom of a 9-in. deep dish pie plate. Layer with onion, peppers, feta cheese, olives, tomatoes and yogurt mixture. Top with parsley and additional mint if desired. Chill until serving., Cut each pita half into 3 wedges; separate each wedge into 2 pieces. Place in a single layer on ungreased baking sheets. Easy Spanakopita Appetizers image

Steps:

  • Preheat oven to 425°. In a large bowl, mix the first 9 ingredients. Place 1 sheet of phyllo dough on a work surface; brush with butter. Layer with 2 additional phyllo sheets, brushing each layer. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.), Arrange 3/4 cup spinach mixture in a narrow row along the long end of phyllo to within 1 in. of edges. In the meantime, combine the egg, yolk, semolina, cornstarch, salt, and remaining sugar in a small bowl and whisk together until smooth. Slowly add the steaming hot milk into the egg mixture and whisk together to temper. Return the mixture to the saucepan and cook over medium heat until it comes to a boil and thickens. Remove from the heat and whisk in the vanilla extract. Set aside.
  • Assemble the tart. Line a half sheet (13 inches by 8 by 1 inch) pan with parchment paper. Place the first phyllo sheet onto the parchment and drizzle with butter and sprinkle about a teaspoon of granulated sugar on top. Layer the remaining phyllo sheets with butter and sugar. The top sheet does not need any butter or sugar. Brush the edges of the phyllo with butter. Pour the custard into the center and spread it evenly leaving a 2-3-inch border all around. Arrange the apricot slices on top of the custard. Fold the sides over the edge of the custard to create a crust. Brush the crust with butter and bake on the center rack for about 45 minutes or until golden.
  • Add 1 tablespoon of water to the apricot jam and warm it through until melted. Brush the jam over the apricots as soon as it comes out of the oven. Allow the tart to cool 10-15 minutes before serving. Dust confectioner’s sugar over the crust and serve. Enjoy!
