MEXIMELT A LA AMY
I love the Meximelts at Taco Bell. However, I don't eat there a lot because sometimes, it gives me a tummy ache. But when I do, there are only two things I order-EVER! Chili-cheese burritos and Meximelts. One of my gal-pals worked there and told me what was in one. I couldn't figure it out because I was too busy inhaling it. So...here's my take on the Meximelt.

Steps:
- Prepare the hamburger meat and drain off all the grease and/or water. Season.
- Microwave the tortilla until it is soft and easy to roll.
- Place a layer of ground beef in the bottom.
- Combine all the cheeses (I just throw it all in a zip-top bag and shake so if there is any left over, I can have it for later.)and sprinkle the desired amount over the beef.
- Add desired amount of salsa, but do not use too much.
- (This is sort of like a taco, only the cheese is melted and there is no lettuce or sour cream or any other toppings.).
- Fold in half and place on a plate.
- Microwave for 30 seconds or just until the cheese is melted.

This is my own throw together. It's quick and easy. This recipe is for a BIG Family. Hope you enjoy it as much as we do.

- brown burger in skillet;drain.
- prepare spanish rice according to pkg;
- mix cook spanish rice with drained burger, rotell(drained), and taco seasoning.
- Cook till hot then add shredded cheese cover unil melted mix together.
- serve on plates add corn chips and/or toppings. Enjoy!

- Use as much cheese as you like.
- Turn heat to low.
- Put a lid on it to melt cheese.
- Place on hamburger buns.
- We like these with Lay`s chips and cottage cheese!

Make an easy pasta dish pepped up with salsa, beans, chiles and cheese.

- Heat oven to 350°F. Cook and drain pasta shells as directed on package.
- Meanwhile, in 2-quart saucepan, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in cilantro, cumin, chiles and beans.
- In ungreased 13x9-inch (3-quart) glass baking dish, spread 1 cup of the salsa. Spoon about 1 1/2 tablespoons beef mixture into each shell. Place shells, filled sides up, on salsa in dish. Pour remaining salsa evenly over shells. Sprinkle with cheese.
- Cover with foil; bake 30 minutes. Uncover; let stand 10 minutes before serving.

- Spray a large skillet with cooking spray and then heat on medium-high heat. Add hamburger and cook until browned and done throughout. Drain fat from hamburger. Add taco seasoning (per package instructions). Turn down to low and keep warm.
- Place a serving of hamburger meat, pepperjack and cheddar cheese down the center of each tortilla, leaving a 1" gap at the top and bottom of the tortilla. Top with a serving of pica de gallo. Fold in the top and bottom of the tortilla, then roll until ingredients are fully enclosed.
