MEXICAN FIESTA SALAD
"I was making a Mexican themed dinner one night last summer, and figured I'd make a salad with the fresh produce I had. I threw in anything that reminded me of Mexican food. Thankfully, it turned out, and the combination of salsa and ranch dressing is one we now use on sandwiches burgers and more, " writes Heather Byers from Pittsburgh, Pennsylvania.

SOUTHWEST FIESTA DRESSING
Saw a few recipes called for this dressing and that it wasn't posted on this site. Nice easy southwest dressing for salads. Used it on our last camping trip; it was quick and easy to prepare in our trailer.

- Stir yogurt, sour cream, ketchup, onion, lime juice, cilantro, cumin, chili powder, garlic powder, and salt together in a bowl with a whisk until smooth.

- Sprinkle beef strips with fajita seasoning. Saute beef in oil in large nonstick skillet over medium-high heat 3 to 4 minutes.
- Add peppers and onion and saute 2 to 3 minutes longer or until vegetables are tender-crisp.
- Divide lettuce on 2 large plates. Spoon beef mixture over lettuce and arrange tomatoes, beans, olives and cheese over each. Serve with Southwest Fiesta Dressing, to taste. Refrigerate leftovers.

- For the dressing: Mix together the mayonnaise, milk, sour cream, parsley, cilantro, chili powder, cumin, hot sauce, garlic and salt and pepper to taste in a medium bowl. Set aside.
- For the salad: Prepare a grill pan or grill for medium-high heat. Grill the corn until nice and golden, with good grill marks on the kernels, 10 to 12 minutes. Allow to cool a bit, then cut the kernels off the cobs.
- Add all the salad ingredients to a bowl in layers: first the lettuce, followed by the tomatoes, corn, red onions, cheese and tortilla chips.
- Pour the dressing into a small serving bowl and serve alongside the salad.

- Cook fusilli pasta according to package directions, until just tender but firm to the bite.
- Drain pasta and rinse with cold water to cool.
- Transfer drained pasta to a large bowl.
- Add 1 1/2 Tablespoons olive oil and mix thoroughly to coat.
- Add diced tomatoes, corn kernels, carrot strips and chopped onions; toss well.
- In a small bowl, whisk together mayonnaise, Dijon mustard, and fresh lime juice.
- Mix in minced jalapenos, chili powder, ground cumin and chopped cilantro.
- Add dressing to pasta mixture and mix well to blend.
- Season to taste with salt and pepper.
- Chill at least 1 hour before serving.
