TRADITIONAL MEXICAN MOLLETES
A traditional Mexican open sandwich with refried beans and melted cheese served with salsa. Perfect for breakfast, lunch, or as a tasty snack.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with parchment paper.
- Remove some of the bread from the middle of bread halves to accommodate more toppings. Spread about 1 teaspoon butter on each half.
- Spread 2 to 3 tablespoons warmed refried beans on bread. Sprinkle about 1/4 cup Borden® Cheddar and Monterey Jack shredded cheese on the beans. Place bread halves on prepared baking sheet.
- Bake in preheated oven until the cheese is melted and bubbly and the bread is crispy, 15 to 20 minutes.
- Top molletes with Mexican salsa or pico de gallo.

This is from my sister-in-law. Very simple and quick to make. Makes a great appetizer for last minute get togethers, superbowl parties, or late night snacks. Can serve with a salad for a cheap, fast meal.

Steps:
- Preheat oven to 350.
- Cut Bread in the middle lengthwise.
- Spread refried beans on each section of bread.
- Sprinkle cheese over the top.
- Place on cookie sheet and bake for 15 min (or until bread is browned and cheese is melted).
- While cooling, spoon on picante sauce to taste.
- Cut into 2 inch strips and serve.

- If you want to make the bean puree, start by roughly chopping 1/2 an onion and peel 2 garlic cloves. Saute the onion and garlic in a dollop of oil over medium heat for 5-7 minutes. Drain and rinse one can of black beans. Add the black beans to the onion mixture along with 2 chipotles in adobo, 1 Tablespoon adobo sauce, 1/2 teaspoon cumin, 1/2 teaspoon salt, freshly ground pepper, and 1/2 cup water (or stock). Simmer for a few minutes until heated through. Combine the bean mixture in a blender or food processor. Salt to taste.
- If making fresh Pico de Gallo, start by giving the veggies a good rinse. Chop up 2 tomatoes, 1/2 onion, 1/2 jalapeno, and 15-20 sprigs cilantro. Add to a mixing bowl along with 1/2 teaspoon salt and the juice of 1/2 lime. Combine well and take a taste for seasoning, adding more salt or lime juice if necessary.
- Cut the bread rolls in half and bake them in a 400F oven for a few minutes before adding any toppings; this will help crisp them up. You can optionally add a layer of butter to each roll.
- Top each roll with a layer of beans and shredded cheese. Bake for 3-5 minutes or until the cheese is thoroughly melted.

- Feel free to use a 15 oz can refried beans and season as described here. Heat and set aside. If too thick, thin with a little water.
- In a skillet over medium high heat add the black beans and all liquid from can. Add the garlic and onion powders, cumin, chipotle powder, salt and pepper. Stir and cook several minutes.
- In a small bowl mix together the chopped onion and lime juice. Toss to coat and set aside for 15 minutes.
