MEXICAN TACO CORNBREAD BAKE
Mexican night I made this easy cornbread bake. The cornbread really gave it alot of extra flavor.

Steps:
- 1. Preheat oven to 400 degrees. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the water and taco seasoning. Simmer for 5 minutes.
- 2. Stir in 1/2 cup cheese, Rotel tomatoes and black beans. Prepare cornbread according to package and mix with hamburger mixture. Spoon into a greased 8x8 baking dish. Bake uncovered for 20 minutes.
- 3. Sprinkle with remaining cheese. Bake 3 to 5 minutes longer or until cheese is melted. Serve with sour cream and salsa. Or just salsa on top.

An easy casserole dish I found in the Taste of Home Casserole cookbook, originally from Vicki Good. I adapted it to suite my family's tastes.

Steps:
- After cooking and draining the ground beef, add the onions, tomato sauce, corn, water, and taco seasoning.
- Spoon into a greased 2 1/2 quart baking dish.
- Prepare the corn bread according to the package directions. Pour over the beef mixture.
- Bake uncovered at 400 degrees for 20 minutes or until the cornbread is done.
- Top with cheese and bake 5 more minutes to melt the cheese.
- Enjoy!

Steps:
- 1. Brown the beef and drain.
- 2. Stir in the taco sauce, water,corn, pepper, and tomato sauce.
- 3. Pour into a 12 x 7 inch glass dish or a 2-quart casserole dish.
- 4. In a bowl, mix the corn muffin mix according to the package directions. Then stir in half the onions.
- 5. Spoon the corn muffin mixture around the outer edge of the casserole.
- 6. Bake at 400 degrees, uncovered for 20 minutes.
- 7. Remove from the oven and sprinkle the cheese and remaining onions on the corn muffin topping. Bake 2 - 3 minutes more.

- With oven rack in center position, preheat oven to 350°F. Lightly grease or spray an 8-inch square baking dish with nonstick cooking spray.
- Set a pot or large skillet over medium heat and cook ground beef until browned. Drain grease, stir in salsa and taco seasoning, and bring to a simmer. Cook for 5 minutes on low until thickened. Stir in black beans, corn, and black olives, and transfer mixture to prepared baking dish, spreading it in an even layer.
- Prepare cornbread batter according to package directions, stirring in cheddar cheese and green chiles until just combined. Spread batter over beef mixture, smoothing to edges of dish. Bake, uncovered, for 30 to 35 minutes or until cornbread is golden brown and tests done with a toothpick. Serve with sour cream, additional salsa, cheddar cheese, black olives, diced tomatoes, diced avocado, or your favorite garnishes.
